Spicy Corn and Veggie Salad
Corn on the cob is a treat I love in the summer, but since corn isn’t exactly packed with nutrients I try to pair it with other veggies that are. This light salad is full of flavor and loaded with antioxidant rich veggies.
Ingredients:
2 cobs corn on the cob
2-3 radishes sliced
1 small cucumber sliced
1 bell pepper diced
1 ripe tomato diced
1/2 cup matchstick carrots
½ jalapeno pepper diced
¼ cup red onion diced
1 tablespoon Buffalo sauce
1 lime zested and juiced
1 teaspoon cumin
Directions:
- Cook corn on the cob and cut corn off 2 cobs once it is cool. Add corn to a medium bowl
- Add radishes, carrots, cucumber, bell pepper, tomato, jalapeno, and onion to the medium bowl. Mix to combine.
- Add lime zest and juice.
- Add cumin and buffalo sauce. Mix well.
- Refrigerate until ready to serve.
