This is by far the best pumpkin cheesecake I have ever made.  The gingersnap crust, ricotta filling, pumpkin spices, and tartness from the cranberry sauce made this a memorable dessert. Recipe adapted from Food Network Ingredients: Crust- 1 14 ounce bag Gingersnaps 4 tablespoons extra

2 Ingredient Healthy Fudge

Dates can provide texture and sweetness to many desserts and other foods.  I have been using dates in a variety of recipes over the last year.  These 2 or 3 ingredient fudge tastes decadent, but uses only natural sugars.  You can use 2 cups of semi-sweet chocolate chips or mix it up like I did with 2 types of chips.  I used one cup of semi-sweet for my bottom layer and one cup of dark chocolate chips as the upper layer in this yummy fudge.

Ingredients:

2 cups chocolate chips (I used one cup semi sweet and one cup dark chocolate)

1 heaping cup Medjool pitted dates

2 cups boiling water

Directions:

  1. Spray a 8×4 or 7×5 baking dish with nonstick spray.
  2. Soften the dates by adding to 2 cups of boiling water.  Allow the dates to soak for 15 minutes.
  3. Melt the chocolate chips in the microwave by heating for 30 second intervals and stirring until smooth in about 2 total minutes.
  4. Add ¾ cup of the water the dates soaked in and the dates to a food processor.  Pulse until smooth.
  5. Pour the date mixture over the chocolate chips and mix in.
  6. If using two types of chips divide the date mixture between the two bowls.
  7. Spread the fudge in the baking dish.  I put the semi-sweet on the bottom and the dark chocolate on the top.
  8. Refrigerate until set. 
  9. Store in an air-tight container in the refrigerator.
  10. Enjoy!

Pumpkin Chai Muffins

Pumpkin mixed with chai spices! These muffins are light, fluffy, and exploding with flavor.

Ingredients:

1 cup pumpkin puree

1 cup almond flour

½ cup whole wheat flour

1 scoop vanilla protein powder

½ cup nonfat vanilla Greek yogurt

1/3 cup unsweetened applesauce

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon baking soda

½ teaspoon ground cardamom

½ teaspoon ground ginger

½ teaspoon salt

¼ teaspoon ground cloves

¼ teaspoon ground nutmeg

½ cup light brown sugar

¼ cup Truvia or ½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees.  Spray muffin tins with nonstick baking spray.
  2. Mix pumpkin, apple sauce, yogurt, and eggs on low in a stand mixer with a paddle attachment.  Add sugar, brown sugar, and vanilla and mix until smooth.   
  3. Whisk flours, protein powder, baking powder, baking soda, salt, cinnamon, cardamom, cloves, ginger, and nutmeg. 
  4. Gradually fold in the flour mixture mixing on low.
  5. Use a spatula to scrape down the sides.
  6. Use a large cookie scooper to fill the muffin tins.
  7. Bake 20-25 minutes until muffins are golden brown and set.
  8. Let muffins cool for at least 10 minutes before removing from muffin tins. 
  9. Cool on a wire rack. Then transfer to an air-tight container.
  10. Store in the refrigerator after 1 day.
  11. Enjoy!

I love chai tea in the winter and saw chai blondies while watching Food Network.  Then I started searching for recipes with chai and stumbled on this tasty dirty chai hummus recipe.  I used this with fresh veggies (carrots) and apples.

Ingredients:

1 can chickpeas drained

¼ cup nut butter

¼ cup light maple syrup

1/8 cup almond milk

2 teaspoons espresso powder

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon cardamom

¼ teaspoon ground clove

¼ teaspoon ground nutmeg

Directions:

  1. Add all ingredients to a food processor.  Pulse until smooth and combined.  Scrape down the sides with a spatula as needed.
  2. Transfer to a bowl/container. 
  3. Drizzle with extra maple syrup or sprinkle with cinnamon.
  4. Serve with vegetables, apple slices, or graham crackers. 
  5. Store in an air-tight container in the refrigerator.
