2 Ingredient Healthy Fudge

Dates can provide texture and sweetness to many desserts and other foods.  I have been using dates in a variety of recipes over the last year.  These 2 or 3 ingredient fudge tastes decadent, but uses only natural sugars.  You can use 2 cups of semi-sweet chocolate chips or mix it up like I did with 2 types of chips.  I used one cup of semi-sweet for my bottom layer and one cup of dark chocolate chips as the upper layer in this yummy fudge.

Ingredients:

2 cups chocolate chips (I used one cup semi sweet and one cup dark chocolate)

1 heaping cup Medjool pitted dates

2 cups boiling water

Directions:

  1. Spray a 8×4 or 7×5 baking dish with nonstick spray.
  2. Soften the dates by adding to 2 cups of boiling water.  Allow the dates to soak for 15 minutes.
  3. Melt the chocolate chips in the microwave by heating for 30 second intervals and stirring until smooth in about 2 total minutes.
  4. Add ¾ cup of the water the dates soaked in and the dates to a food processor.  Pulse until smooth.
  5. Pour the date mixture over the chocolate chips and mix in.
  6. If using two types of chips divide the date mixture between the two bowls.
  7. Spread the fudge in the baking dish.  I put the semi-sweet on the bottom and the dark chocolate on the top.
  8. Refrigerate until set. 
  9. Store in an air-tight container in the refrigerator.
  10. Enjoy!
