2 Ingredient Healthy Fudge
Dates can provide texture and sweetness to many desserts and other foods. I have been using dates in a variety of recipes over the last year. These 2 or 3 ingredient fudge tastes decadent, but uses only natural sugars. You can use 2 cups of semi-sweet chocolate chips or mix it up like I did with 2 types of chips. I used one cup of semi-sweet for my bottom layer and one cup of dark chocolate chips as the upper layer in this yummy fudge.
Ingredients:
2 cups chocolate chips (I used one cup semi sweet and one cup dark chocolate)
1 heaping cup Medjool pitted dates
2 cups boiling water
Directions:
- Spray a 8×4 or 7×5 baking dish with nonstick spray.
- Soften the dates by adding to 2 cups of boiling water. Allow the dates to soak for 15 minutes.
- Melt the chocolate chips in the microwave by heating for 30 second intervals and stirring until smooth in about 2 total minutes.
- Add ¾ cup of the water the dates soaked in and the dates to a food processor. Pulse until smooth.
- Pour the date mixture over the chocolate chips and mix in.
- If using two types of chips divide the date mixture between the two bowls.
- Spread the fudge in the baking dish. I put the semi-sweet on the bottom and the dark chocolate on the top.
- Refrigerate until set.
- Store in an air-tight container in the refrigerator.
