Healthy Slow Cooker Beef Stroganoff

This is a simple slow cooker dinner.  I served in without mushrooms for my kids and added sauteed mushrooms to my dinner.  I lightened this up by using plain nonfat Greek yogurt and Super Greens Ronzoni Rotini instead of egg noodles.

Ingredients:

2 cups reduced sodium beef broth

1 ½ pounds beef stew meat

1 package dry onion soup mix

8 ounces sliced mushrooms

1 cup plain nonfat Greek yogurt

12 ounces pasta

Directions:

  1. Add beef broth, beef, and dry onion soup mix to the crock pot.  Cook on low 6-8 hours.
  2. Bring a large pot of salted water to a boil and cook pasta according to package directions.  Drain and add cooked pasta to the soup.
  3. Stir in the yogurt.
  4. Add mushrooms the last 30 minutes or sauté over medium low heat for 10 minutes and then add in.
  5. Enjoy!

Lime Tostitos are one of my favorite “chips”.  This dinner only took a few minutes to prep and cooked in a few hours in the crock pot.  We topped our casserole with avocado, salsa, plain nonfat Greek yogurt, and olives.  Ingredients: 1 stalk celery 2

These are so good it is hard to decide if they are a breakfast or a dessert.  Either way, I know I will be making these again when I am craving dark chocolate to kick off my day. Ingredients: 4 ripe bananas 2 large eggs

Carrot and Blueberry Muffins

These muffins mix sweet carrots and blueberries to create a healthy and filling breakfast on the go.

Ingredients:

1 cup whole wheat flour

1 cup almond flour

1 scoop vanilla protein powder

2 teaspoons baking powder

2 teaspoons ground cinnamon

½ teaspoon salt

¼ cup light brown sugar

2 large eggs

1 blueberry Chobani yogurt (or ½ cup nonfat vanilla Greek yogurt)

1 teaspoon lemon zest

1 teaspoon pure vanilla extract

2 cups grated carrots

1 ½ cups blueberries divided

Optional topping: turbinado sugar

Directions:

  1. Preheat oven to 350 degrees and spray muffin tins with nonstick spray.
  2. Whisk flours, protein powder, baking powder, cinnamon, salt, and brown sugar in a medium bowl.
  3. Add yogurt, eggs, and vanilla extract to a stand mixer and mix on medium to combine.
  4. Slowly mix in dry ingredients.
  5. Scrape down the sides of the bowl and fold in grated carrots and 1 cup of the fresh blueberries.
  6. Use a large cookie scooper to fill muffin tins.
  7. Top each muffin with 3-4 blueberries. 
  8. Sprinkle turbinado or other sweetener on top of each muffin for a little extra sweetness in each bite.
  9. Bake 25 minutes or until muffins are set.
  10. Let muffins cool in tins for at least 10 minutes before removing.
  11. Let cool completely before transferring to an airtight container.  I refrigerate muffins after 24 hours. 
  12. Enjoy!

Germs have been flowing through my house, so my son decided we should make some lemon whoopie pies.  He said the vitamin C in the lemons would help everyone get better.  I love lemon, so I was okay with his logic.

Ingredients:

Cookies-

1 ¼ cups all purpose flour

1 scoop vanilla protein powder

½ teaspoon baking powder

¼ teaspoon salt

¼ teaspoon baking soda

6 ounces butter at room temperature

1 ¼ cups granulated sugar

2 eggs

2 tablespoons lemon juice (zest from ½ lemon)

1 teaspoon vanilla extract

½ cup plain nonfat Greek yogurt

Filling-

8 ounces reduced fat cream cheese at room temperature

6 ounces butter at room temperature

1 teaspoon vanilla extract

2 tablespoons lemon juice (zest from ½ lemon)

3 cups powdered sugar

Directions:

  1. Preheat oven to 350 and line 2 large baking sheets with parchment paper.
  2. Whisk flour, protein powder, salt, baking powder, and baking soda in a medium bowl.
  3. Beat butter and sugar on medium in a stand mixer until light and fluffy.
  4. Add lemon zest, lemon juice, vanilla extract, yogurt, and eggs and continue to beat on medium.
  5. Add dry ingredients 1 cup at a time beating on medium scraping down the sides of the bowl.
  6. Use a small cookie scooper to make tablespoon size balls 2 inches apart.
  7. Bake for 10 minutes until cookies are just starting to brown on the edges.
  8. Let cookies cool on baking sheet for two minutes before transferring to a wire rack.
  9. For the filling add butter, cream cheese, vanilla, lemon juice, and lemon zest to a stand mixer.  Mix on medium until smooth. Add powdered sugar one cup at a time.
  10. Transfer filling to a piping bag or icing tool.
  11. Flip over half of the cookies and pipe the filling. Top cookies with another cookie a press down slightly. 
  12. Enjoy!
