This is a simple slow cooker dinner. I served in without mushrooms for my kids and added sauteed mushrooms to my dinner. I lightened this up by using plain nonfat Greek yogurt and Super Greens Ronzoni Rotini instead of egg noodles.
Ingredients:
2 cups reduced sodium beef broth
1 ½ pounds beef stew meat
1 package dry onion soup mix
8 ounces sliced mushrooms
1 cup plain nonfat Greek yogurt
12 ounces pasta
Directions:
- Add beef broth, beef, and dry onion soup mix to the crock pot. Cook on low 6-8 hours.
- Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and add cooked pasta to the soup.
- Stir in the yogurt.
- Add mushrooms the last 30 minutes or sauté over medium low heat for 10 minutes and then add in.
- Enjoy!
