My children love fish, so I try to make a dinner using fish at least once a week.  This grilled tilapia with mango salsa only takes a few minutes to prep and serve.  I paired this with a cumin lime coleslaw and couscous with spinach. 

Recipe adapted from Food Network

Ingredients:

4-6 tilapia filets

2 teaspoons ground cumin

2 teaspoons ground coriander

1 tablespoon olive oil

1 or 2 mangos diced

1-2 tablespoons cilantro

1 tablespoon lime juice

Directions:

  1. Preheat grill to max heat.
  2. Paint olive oil over filets and sprinkle with cumin and coriander.
  3. Add mango, cilantro, and lime juice to a small bowl.
  4. Grill tilapia 2-3 minutes per side.
  5. Top tilapia with mango salsa.
  6. Enjoy!
