Grilled Pork Chops with Apple and Mango Chutney

Grilled Pork Chops with Apple and Mango Chutney

I love grilled pork chops and when paired with a fruit chutney they really make my heart sing.  These pork chops are tender, moist, and loaded with flavor even if you are not a chutney lover like I am. We enjoyed this with roasted Italian Brussels sprouts, carrots, and red onions and smashed roasted sweet potatoes.

Recipe adapted from Food Network

Ingredients:

Pork Chops-

¼ cup olive oil (I used a blood orange olive oil)

2 tablespoons Dijon mustard

2 tablespoons apple or orange juice

1 tablespoon fresh parsley

2 teaspoons lemon juice and zest from ½ lemon

2 teaspoons salt

2 cloves garlic

4-6 boneless or bone in pork chops

Apple Mango Chutney-

1 teaspoon olive oil

½ sweet onion diced

2 mangos peeled and diced

1 tablespoon lemon juice and zest from ½ lemon

½ teaspoon ground cumin

2 apples (pink lady or gala) peeled and diced

1 cinnamon stick

Directions:

  1. Pork Chop Marinade– Whisk together the olive oil, mustard, juice, parsley, lemon zest, lemon juice, salt, and garlic in a medium bowl.  Pour the marinade over the pork chops in a shallow dish or zip lock bag.  Marinate for up to 1 hour at room temperature or over night in the refrigerator.
  2. Apple Mango Chutney– Heat a medium saucepan over medium high heat.  Add the olive oil cook the onion for 2-3 minutes.  Add the mango, apple, juice, lemon peel, cumin, and cinnamon stick.  Cook over medium heat stirring often for 15-20 minutes. Remove the cinnamon stick before serving.
  3. Preheat grill to high heat.  Grill pork chops for 3-5 minutes per side.  Let rest for 5 minutes before serving.
  4. Top pork chops with chutney.
  5. Enjoy!
