Chocolate Mint Fudge Chunk Cookies

We were in the mood for something different and chocolate mint chip cookies seemed like a good idea to cool us off on hot summer days.
Ingredients:
1 cup all purpose flour
1/2 cup cocoa powder
1/2 cup chocolate protein powder
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
2 eggs
1 stick unsalted butter at room temperature
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 bag mint fudge chips
Directions:
- Line 2 baking sheets with Parchment paper and preheat oven to 350 degrees.
- Cream butter and sugars in stand mixer.
- Whisk together flour, Cocoa powder, protein powder, salt, baking soda, and baking powder.
- Add eggs and vanilla extract to butter and sugar mixture and mix to combine.
- Gradually fold in dry ingredients.
- Add mint chips.
- Use a small cookie scooper to form balls spaced 2 inches apart.
- Bake 7-9 minutes until cookies are just set.
- Allow cookies to cool on baking rack for 5 minutes. Then transfer to a wire rack to cool completely.
