Chocolate Mint Fudge Chunk Cookies

We were in the mood for something different and chocolate mint chip cookies seemed like a good idea to cool us off on hot summer days.

Ingredients:

1 cup all purpose flour

1/2 cup cocoa powder

1/2 cup chocolate protein powder

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon vanilla extract

2 eggs

1 stick unsalted butter at room temperature

1/2 cup granulated sugar

1/2 cup dark brown sugar

1 bag mint fudge chips

Directions:

  1. Line 2 baking sheets with Parchment paper and preheat oven to 350 degrees.
  2. Cream butter and sugars in stand mixer.
  3. Whisk together flour, Cocoa powder, protein powder, salt, baking soda, and baking powder.
  4. Add eggs and vanilla extract to butter and sugar mixture and mix to combine.
  5. Gradually fold in dry ingredients.
  6. Add mint chips.
  7. Use a small cookie scooper to form balls spaced 2 inches apart.
  8. Bake 7-9 minutes until cookies are just set.
  9. Allow cookies to cool on baking rack for 5 minutes. Then transfer to a wire rack to cool completely.
