NC Sunker- Cobbler with Blueberries, Strawberries, and Rhubarb

I saw NC sunker in an advertisement for a restaurant and after reading a review I just had to try it.

Ingredients:

Filling-

2 cups Blueberries

2-4 cups Strawberries quartered

6 stalks rhubarb diced

1/4 cup sugar

3 tablespoons cornstarch

1/2 teaspoon salt

Topping:

3/4 cup all purpose flour

1/4 cup vanilla protein powder

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 stick butter melted

1/2 cup milk

1 teaspoon vanilla extract

Optional- Sprinkle cinnamon sugar over the topping before baking

Note: You can substitute different fruits.

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix filling ingredients in a large bowl. Then transfer to an 8×8 pan.
  3. Bake 15-20 minutes.
  4. Meanwhile whisk dry ingredients for topping in a medium bowl.
  5. When berries are ready melt the butter and whisk with milk and vanilla extract.
  6. Pour topping over fruit.
  7. Optional- Sprinkle cinnamon sugar over topping.
  8. Bake 30-40 minutes. If topping browns too quickly you can cover with aluminum foil.
  9. Allow to cool before serving.
  10. Enjoy as is or topped with vanilla ice cream.
