Vanilla Whoopie Pies with Chocolate Buttercream

Whoopie pies are one of my favorite bite size treats. These feature a soft vanilla cookie with a delectable chocolate buttercream in the center. If you want to make these truly indulgent you can add a little peanut butter on one of the cookies before you sandwich them together or roll them in sprinkles to add color and texture.

Ingredients:

Cookies-

2 1/2 cups all-purpose flour

1/2 cup vanilla protein powder

1 teaspoon baking soda

3/4 teaspoon baking powder

3/4 teaspoon salt

1 cup granulated sugar

1 stick unsalted butter at room temperature

2 teaspoons vanilla extract

1 large egg

2/3 cup buttermilk

Buttercream Filling-

1 1/2 pounds confectioners’ sugar

1 1/2 sticks unsalted butter at room temperature

1/4 cup cocoa powder

1 teaspoon vanilla extract

2-6 tablespoons milk

Directions:

  1. Line 2 baking sheets with parchment paper.
  2. Whisk together the flour, protein powder, baking soda, baking powder, and salt.
  3. Beat the granulated sugar, butter, and vanilla in a large bowl on medium speed until light and fluffy.
  4. Add the egg and beat until combined.
  5. Reduce the speed to low and alternate adding dry ingredients and buttermilk in small batches.
  6. Scrape the sides of the bowl and cover to refrigerate for at least 30 minutes.
  7. Use a small cookie scooper to form balls 2 inches apart on the baking sheets.
  8. Bake 7-9 minutes until cookies are set and beginning to brown.
  9. Slide parchment paper off the baking sheet and allow cookies to cool.
  10. Add the confectioner’s sugar and butter to the stand mixer and whisk beginning on low and increasing speed once the powder is mixed in.
  11. Add the vanilla extract, cocoa powder, and milk.
  12. Whisk and add more milk or powdered sugar if needed to get the desired consistency.
  13. Flip over half of the cookies.
  14. Use an icing tool to pipe the buttercream on half of the cookies.
  15. Gently press another cookie on top to assemble the whoopie pies.
  16. Store in an air-tight container.
  17. Enjoy!

I made these for my son’s Christmas party at his preschool and they were delicious! Ingredients: Cupcakes- 1 cup granulated sugar ¾ cup all purpose flour ½ cup unsweetened cocoa powder ½ teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt ½ cup buttermilk 

<strong>Pop It Candy</strong>

Pop It Candy

My 6 year and 3-year-old sons love to play with pop its.  One day my 6-year-old decided he wanted to make pop it candy, so I took his lead and we made candy using his pop its.  We used M&Ms and chocolate and vanilla candy melts, both were surprisingly delicious. 

Ingredients:

M&Ms

Chocolate or vanilla candy melts

Pop its

Directions:

  1. Set pop its on a baking sheet.
  2. Place M&Ms (chocolate chips or other candy) in the holes of the pop it.
  3. Pour candy melts into a microwavable safe bowl.  Heat for one minute increments at 50% power stirring after heating until the melts form a liquid. 
  4. Pour the melted chocolate/candy over the molds and use a spatula to spread it out in an even layer.
  5. Transfer pop its to the refrigerator to set for at least an hour.
  6. Flip pop its over and carefully peel the pop it off the candy.
  7. Enjoy!

Whoopie pies are so light and fluffy.  These are filled with an Oreo and cream cheese filling that you won’t be able to resist.  These were the perfect snow day treat. Ingredients: Whoopie Pie- 1 ½ cups all purpose flour 2/3 cup unsweetened cocoa powder

I absolutely adore Samoa Girl Scout cookies! The coconut, almond, and chocolate taste divine.  These taste just like the famous cookies, but instead of being loaded with sugar actually offer some protein and nutrition to help you power through the day. Ingredients ½ cup old 

Banana Split Protein Balls

Banana Split Protein Balls

Banana, strawberry, chocolate, and peanut butter make an excellent combination for a bite size snack. These energy balls taste so good you will think you are eating dessert!

Ingredients:

1 1/2 cups cashews (or other preferred nut)

1/2 cup banana chips

1/4 cup freeze dried strawberries

2 tablespoons peanut butter powder

2 tablespoons chocolate protein powder

1 tablespoon flax seeds

3-4 teaspoons maple syrup divided

3 tablespoons almond milk divided (more if needed)

6 dates

Directions:

Strawberry– Pulse 1/2 cup cashews in a food processor. Add 2 dates. Pulse. Add freeze dried strawberry and flax seed. Pulse. Add 1 tablespoon almond milk and a teaspoon of maple syrup. Put in bowl and set aside.

Banana– Pulse 1/2 cup cashews. Add 2 dates. Pulse. Add banana chips. Pulse. Add 1 tablespoon almond milk and a teaspoon of maple syrup. Put in bowl and set aside.

Peanut Butter/Chocolate– Pulse 1/2 cup cashews. Add 2 dates. Pulse. Peanut butter and protein powder. Pulse. Add 1 tablespoon almond milk and a 1-2 teaspoons of maple syrup. Put in bowl and set aside.

Place bowl with mixtures in the fridge and let set for at least 15 minutes.

I put all three mixture in different sections of one large bowl. I used a spoon to get a little of each flavor. Then I rolled the mixture into one ball.

Store in an air tight container in the fridge.
