Pumpkin Pie Spice Chip Cookies

These are my fall twist on chocolate chip cookies. I make these whenever I manage to find Pumpkin spice chips.

INGREDIENTS:

2 1/2 cups all-purpose flour

1 cup light brown sugar

1/2 cup vanilla protein powder

2 sticks unsalted butter at room temperature

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 1/2 teaspoons pumpkin pie spice

1 bag pumpkin spice chips

DIRECTIONS:

  1. Preheat oven to 350 degrees and line two baking sheets with Parchment paper.
  2. Cream butter and sugar in stand mixer.
  3. Add eggs and vanilla extract to butter and sugar. Mix on medium scraping down the sides of the bowl as needed.
  4. Mix flour, protein powder, baking powder, baking soda, salt, and pumpkin pie spice. Whisk together.
  5. Add flour mixture one cup at a time.
  6. Add pumpkin spice chips to mixture.
  7. Use a medium sized cookie scooper to form balls. Space balls out a few inches on baking sheet.
  8. Bake 7-8 minutes until cookies are just set.
  9. Let cookies rest on baking sheet for 5 minutes before transferring to a wire rack to cool.
  10. Store in an air tight container.
