Pumpkin Muffins with Pumpkin Spice Chips
These are a tasty and healthy way to start the day.
INGREDIENTS:
1 can pumpkin puree
2 large eggs at room temperature
1/2 cup fat free vanilla Greek yogurt
1/2 cup light brown sugar
1 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon pumpkin pie spice
1 1/2 cups all purpose flour
1/2 cup vanilla protein powder
1/2 cup pumpkin spice chips plus a few to place on top
3 tablespoons sugar in the raw
DIRECTIONS:
- Preheat oven to 350 degrees and spray muffin tins with baking spray.
- Mix eggs, pumpkin puree, vanilla yogurt, vanilla extract, and sugar in stand mixer.
- Whisk flour, protein powder , salt, baking powder, baking soda, and pumpkin pie spice in a medium bowl.
- Gradually add dry ingredients to wet.
- Scrape down sides of bowl.
- Add pumpkin spice chips.
- Use a large cookie scooper to fill muffin tins.
- Sprinkle 2-4 pumpkin spice chips and sugar in the raw on top of each muffins.
- Bake 18-20 minutes
- Let cool in tins for 5 minutes before transferring to wire rack to cool completely.
- Store in an air tight container and refrigerate if storing for more than 2 days.
