Peanut Butter Blondies (Light version)

This is a lightened up version of a blondie, that still tastes great.

INGREDIENTS:

1/2 cup peanut butter

1/2 cup plain nonfat Greek yogurt

1/4 cup lite maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon sea salt

1/2 cup all purpose flour

1/2 cup vanilla protein powder

1/4 cup semisweet chocolate chips

1/4 cup peanut butter chips

1 tablespoon sugar in the raw

DIRECTIONS:

  1. Preheat oven to 350 degrees and spray 8×8 pan with baking spray.
  2. Mix peanut butter, yogurt, applesauce, vanilla extract, and maple syrup in mixer.
  3. Whisk flour, protein powder, salt, and baking powder.
  4. Gradually add dry ingredients
  5. Add chocolate and peanut butter chips.
  6. Transfer dough to 8×8 pan.
  7. Sprinkle dough with sugar in the raw.
  8. Bake 18-22 minutes until dough is just set.
  9. Allow to cool on a wire rack.
  10. Store in an air tight container.
  11. Enjoy a lighter version of a peanut butter blondie without the guilt.
