Ingredients:
3 large eggs
Dash of cream of tarter
Dash of sea salt
1/3 cup plain nonfat Greek yogurt
Directions:
Preheat oven to 300 degrees. Line a baking sheet with parchment paper.
Spray the baking sheet with nonstick spray.
Separate egg whites from egg yolks.
Add egg whites to mixing bowl. Add a dash of cream of tarter. Beat on high until stiff peaks form in about 4 minutes. Set aside.
Add egg yolks and yogurt to mixing bowl. Beat on medium until blended.
Gently fold egg white mixture into egg yolk mixture. Be careful not to overmix.
Use a large spoon to form pancake size circles about 3 inches in diameter on the baking sheet.
Bake 25-30 minutes until lightly golden. Use a spatula to loosen but leave on baking sheet for at least 3 minutes before transferring to a wire rack to cool.

Ingredients:
1 yellow squash
1 zucchini
½ cup fresh basil
8 sprigs thyme leaves
¼ cup grated parmesan cheese
½ cup shredded Italian cheese
1/3 cup whole wheat flour
1 egg
1 teaspoon dried oregano
Optional: pizza sauce to top
Directions:
Grate or chop squash and zucchini. Transfer to a plate and sprinkle with salt. Let sit 30 minutes. (The salt helps draw out the water).
Use paper towels or hand towels to press down and extract water or wring out to remove as much excess water as possible.
Chop basil and thyme leaves. Add to a large bowl.
Add zucchini, basil, thyme, oregano, grated and shredded cheese, and egg to bowl. Mix gently. Add flour and use a spatula to scrape down the sides and incorporate the flour.
Use a large cookie scooper or spoon to form 6-8 large balls. Flatten slightly to make patties/cakes.
Spray the basket of an air-fryer with non-stick spray.
Air fry at 370 for 10-15 minutes until lightly golden.

Ingredients:
Mango Chimichurri-
½ cup fresh mint leaves
3 cloves garlic
2 tablespoons fresh cilantro
1 tablespoon fresh parsley
½ cup extra virgin olive oil
¼ cup red wine vinegar
2 tablespoons honey
2 teaspoons paprika
1 ripe mango
Steak-
3 1 ½ inch thick well marbled rib eye steaks
Directions:
Mango Chimichurri- Add mint, garlic, cilantro, parsley, olive oil, red wine vinegar, honey, paprika, and mango to a food processor. Pulse to create a smooth sauce.
Pour some chimichurri and spread on the bottom of a large, covered dish. Place the steaks on the sauce. Pour some sauce on the steaks and spread to coat. Marinated in the refrigerator for at least 30 minutes preferably a few hours.
Remove the steak from the refrigerator at least 30 minutes before cooking.
Preheat a grill to high heat. Grill the steak for at least 5 minutes per side. Let the steak rest 5 minutes before slicing.
