German Potato Salad with Turnips and Sweet Potatoes

I love the flavors from German potato salad.  I decided to experiment with turnips and sweet potatoes versus red potatoes to reduce the carbs and enhance the nutritional value of this salad.  Normally German potato salad includes bacon, but I wasn’t in the mood for bacon.  Feel free to add bacon when you make this.

Ingredients:

1 sweet potato peeled and cubed

2 large turnips peeled and cubed

½ red onion diced

1 green onion diced

4 tablespoons red wine vinegar

2 tablespoons Dijon mustard

2 tablespoons pure maple syrup

Olive oil spray

Directions:

  1. Bring a large pot of salted water to boil.  Add turnips and sweet potatoes.  Cook for 10 minutes until tender. Drain.
  2. Spray a nonstick pan with olive oil spray.  Add red onions and cooked turnips and sweet potatoes.  Cook mixing often for 5 minutes.
  3. Add 2 tablespoons red wine vinegar, Dijon mustard, and pure maple syrup while cooking and mixing often.
  4. Transfer to a medium bowl.  Add green onions and remaining 2 tablespoons red wine vinegar.
  5. Enjoy warm or refrigerate in a covered bowl until ready to serve.
  6. Mix to redistribute dressing before serving.

Roasted Cauliflower Hummus

I eat hummus with fresh vegetables just about every day.  To keep life interesting, I like experimenting with different types of hummus and I prefer to make it myself when I have time so I can control the ingredients.  This low carb hummus tastes just like a basic hummus without all the calories.  I may even add some Everything Bagel Seasoning just to punch up the flavor.

Ingredients:

5 cups cauliflower florets

3 tablespoons tahini

2 tablespoons lemon juice; zest of 1 lemon

2 tablespoons extra virgin olive oil

3 tablespoons warm water

1 garlic clove

½ teaspoon cumin or 1 teaspoon Everything Bagel Seasoning Blend

Olive oil spray

Directions:

  1. Preheat oven to 400 degrees.  Line a baking sheet with aluminum foil.
  2. Lay cauliflower on baking sheet.  Spray with olive oil spray. Roast 20 minutes.
  3. Add tahini, lemon juice and zest, olive oil, water, garlic, and seasoning to food processor. Pulse to mix.
  4. Add cauliflower after it is done roasting. Pulse and scrape down the sides.
  5. Add more water or olive oil if needed to reach desired consistency.
  6. Enjoy with fresh vegetables, on a wrap, or by the spoonful.

Banana and peanut butter are the perfect combo.  The healthy muffins taste delicious and satisfy cravings too. Ingredients: 1 cup whole wheat flour 1 cup almond flour 2 scoops vanilla protein powder 3 tablespoons powdered peanut butter 1 teaspoon baking powder 1/2 teaspoon baking soda

Healthy Feta Eggs Benedict with Sautéed Kale

I see recipes for Eggs Benedict all the time, but the overwhelming amount of butter usually sends me running.  When I saw a recipe for a yogurt sauce with the addition of sautéed vegetables I knew I had to try it.  I used kale but you could use spinach.  I ate this over cloud bread and cabbage grilled cheese steaks.  Both were delicious!

Ingredients:

Feta Sauce-

2 ounces feta crumbled

½ cup plain nonfat Greek yogurt

½ teaspoon paprika

Sautéed Greens

4 cups spinach or kale

2 cloves garlic minced

Juice of ½ lemon

Olive oil spray

4 large eggs

Serve on cloud bread, cabbage steaks, toast, etc…

Directions:

  1. Mix feta, yogurt, and paprika in a small bowl. Refrigerate until ready to serve.
  2. Add kale/spinach to a nonstick pan sprayed with olive oil spray.  Cook on medium mixing often.
  3. Add garlic and lemon juice.
  4. Add 2 inches of water to a large saucepan.  Cover and bring to a boil.
  5. Crack eggs over a small bowl one at a time.  Gently pour eggs into boiling water.  Cook each egg for 2-3 minutes until whites are firm but the yolks are still runny.
  6. Use a slotted spoon to remove eggs from the pan.  Use a paper towel or dish towel to remove excess water.
  7. To serve add sautéed greens, poached egg, and yogurt sauce over bread.
  8. Enjoy!
