I love the flavors from German potato salad. I decided to experiment with turnips and sweet potatoes versus red potatoes to reduce the carbs and enhance the nutritional value of this salad. Normally German potato salad includes bacon, but I wasn’t in the mood for bacon. Feel free to add bacon when you make this.
Ingredients:
1 sweet potato peeled and cubed
2 large turnips peeled and cubed
½ red onion diced
1 green onion diced
4 tablespoons red wine vinegar
2 tablespoons Dijon mustard
2 tablespoons pure maple syrup
Olive oil spray
Directions:
- Bring a large pot of salted water to boil. Add turnips and sweet potatoes. Cook for 10 minutes until tender. Drain.
- Spray a nonstick pan with olive oil spray. Add red onions and cooked turnips and sweet potatoes. Cook mixing often for 5 minutes.
- Add 2 tablespoons red wine vinegar, Dijon mustard, and pure maple syrup while cooking and mixing often.
- Transfer to a medium bowl. Add green onions and remaining 2 tablespoons red wine vinegar.
- Enjoy warm or refrigerate in a covered bowl until ready to serve.
- Mix to redistribute dressing before serving.
