Fresh Peach Salad
Peaches fresh from the produce stand disappear quickly at my house in the summer. However; I managed to snag a few peaches to make this delicious salad.
Recipe adapted from Food Network
Ingredients:
Vinaigrette-
¼ cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 shallot thinly sliced
Salt and pepper to taste
Salad-
5 ounces baby arugula
4 ounces smoked gouda diced into small pieces
2 peaches thinly sliced
1 bell pepper diced
½ cup roasted pecans
Directions:
- Add oil, vinegar, honey, mustard to a food processor or jar with lid. Pulse or mix. Add shallots and pulse or shake. Vinaigrette can be made in advance and stored in the refrigerator.
- Add arugula, peaches, pecans, and gouda to a large bowl. Mix to combine.
- Drizzle the dressing over the salad and mix when ready to serve.
