Roasted Cauliflower Hummus
I eat hummus with fresh vegetables just about every day. To keep life interesting, I like experimenting with different types of hummus and I prefer to make it myself when I have time so I can control the ingredients. This low carb hummus tastes just like a basic hummus without all the calories. I may even add some Everything Bagel Seasoning just to punch up the flavor.
Ingredients:
5 cups cauliflower florets
3 tablespoons tahini
2 tablespoons lemon juice; zest of 1 lemon
2 tablespoons extra virgin olive oil
3 tablespoons warm water
1 garlic clove
½ teaspoon cumin or 1 teaspoon Everything Bagel Seasoning Blend
Olive oil spray
Directions:
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
- Lay cauliflower on baking sheet. Spray with olive oil spray. Roast 20 minutes.
- Add tahini, lemon juice and zest, olive oil, water, garlic, and seasoning to food processor. Pulse to mix.
- Add cauliflower after it is done roasting. Pulse and scrape down the sides.
- Add more water or olive oil if needed to reach desired consistency.
- Enjoy with fresh vegetables, on a wrap, or by the spoonful.
