Sweet Potato Side

Sweet potatoes can taste amazing without tons of sugar and butter added to them.  This simple side dish uses just a little olive oil and onion and tastes fantastic.

Ingredients-

1-2 sweet potatoes peeled and cut into cubes

½ onion cut into slices

1 tablespoon extra virgin olive oil

Directions:

  1. Preheat oven to 400 degrees.
  2. Spray a small glass baking dish (8×8 or smaller) with olive oil spray.
  3. Spread out sweet potato and onion in dish.
  4. Drizzle olive oil over the sweet potaotes and onions.
  5. Bake 30 minutes until sweet potato is tender.
  6. Enjoy!

Leftover ham tastes fantastic when paired with melted cheese and roasted vegetables. This is a quick and easy lunch or dinner that is easy to customize to your liking.

Ingredients

1-2 whole wheat tortillas per person

1 slice cooked spiral ham per serving

Vegetables- tomatoes, onion, peppers, spinach, etc..

2 slices of cheese per serving (Pepper Jack, Colby Jac, etc..)

Directions:

  1. Preheat oven to 350 degrees.  Line a baking sheet with aluminum foil.
  2. Spread out tortillas on the baking sheet. 
  3. Top tortillas with cheese slices, ham, vegetables, etc..
  4. If making a kid size tortilla fold it in half and only put toppings on one half.  I made mine an open face quesadilla and covered the entire tortilla with toppings.
  5. Spray tortillas with olive oil spray.
  6. Bake 10-15 minutes or until cheese melts.
  7. Broil 3 minutes on high to achieve a crispy texture.
  8. Enjoy!!

Anytime I have leftover ham after a big holiday meal I always make this casserole.  It doesn’t take long to prepare and tastes like a big ham omelet. Recipe adapted from Food Network Ingredients- 2-3 large carrots peeled and sliced into rounds 1-2 russet potatoes

Key Lime Pie Energy Balls

Key lime pie in an energy ball! These may not taste exactly like key lime pie, but the flavors are close.  If you like coconut and lime then you will enjoy these tasty energy balls.

Ingredients:

1/2 cup cashews

1/2 cup almonds

1 cup pitted and dried dates (4 large Mejdool dates)

1 scoop vanilla protein powder

1 tablespoon flax seeds

1/4 cup shredded unsweetened coconut

1 lime, zested & juiced 

Directions:

  1. Add all ingredients to food processor.
  2. Process on high until a crumbly and sticky mixture form.
  3. Use an ice cream scooper to form balls. If the balls do not stick together add a little more lime juice or refrigerate the mixture for 15 minutes and then try again. 
  4. This made 16 energy balls for me.
  5. Store in an air-tight container in the refrigerator.
