2 slices of cheese per serving (Pepper Jack, Colby Jac, etc..)
Directions:
Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.
Spread out tortillas on the baking sheet.
Top tortillas with cheese slices, ham, vegetables, etc..
If making a kid size tortilla fold it in half and only put toppings on one half. I made mine an open face quesadilla and covered the entire tortilla with toppings.
Spray tortillas with olive oil spray.
Bake 10-15 minutes or until cheese melts.
Broil 3 minutes on high to achieve a crispy texture.

Ingredients:
1/2 cup cashews
1/2 cup almonds
1 cup pitted and dried dates (4 large Mejdool dates)
1 scoop vanilla protein powder
1 tablespoon flax seeds
1/4 cup shredded unsweetened coconut
1 lime, zested & juiced
Directions:
Add all ingredients to food processor.
Process on high until a crumbly and sticky mixture form.
Use an ice cream scooper to form balls. If the balls do not stick together add a little more lime juice or refrigerate the mixture for 15 minutes and then try again.
This made 16 energy balls for me.
Store in an air-tight container in the refrigerator.
