Ambrosia Salad
My family always enjoys a dish called Cranberry Fluff at Thanksgiving and Christmas. My dad must have been craving something similar for the spring because he found a recipe and asked me to lighten it up for Easter dinner. We found a winner! This recipe may be our new spring/summer family dinner dessert like side dish.
Ingredients:
2 cups strawberries chopped
2 cups blueberries
2 cups pineapple chunks
1 can mandarin oranges drained
1-2 cups mini marshmallows, fruit flavored or plain
6 ounces nonfat vanilla Greek yogurt
8 ounces sugar or fat free cool whip
Directions:
- Add fruits to a medium or large bowl. Mix gently to combine.
- Add marshmallows and mix.
- Add vanilla yogurt and mix.
- Fold in cool whip. Mix gently.
- Refrigerate for 1-2 hours before serving.
- Store in a refrigerator.
