Roasted Vegetable Linguine with Shrimp

Roasted Vegetable Linguine with Shrimp

We love sauteed shrimp and roasted vegetables are one of my favorite things.  I would happily eat just shrimp and veggies with some marinara sauce, but I added the linguine to keep my kids happy.  Feel free to adjust the ingredients to match your preferences.

Ingredients:

2 zucchini halved and cut into slices ½ inch thick

1 bunch asparagus trimmed and cut into 2 inch pieces

2 cups spinach

1 28 ounce can diced tomatoes with Italian seasoning

9 ounces linguine

2 pounds shrimp

½ onion diced

2 cloves garlic

½ cup grated pecorino Romano or parmesan cheese

½ cup fresh basil

1 tablespoon Italian seasoning

Directions:

  1. Preheat the oven to 425 degrees. Line a baking sheet with aluminum foil.  Spread out the zucchini and asparagus.  Spray with olive oil spray.  Season with salt, pepper, and Italian seasoning.  Roast for 20 minutes.
  2. Bring a large pot of salted water to a boil.  Cook linguine according to package directions to al’ dente. Reserve 1 cup of the hot pasta water.
  3. Spray a nonstick pan with olive oil spray.  Sauté the onion, garlic, and spinach on medium low heat for 5 minutes. Add the diced tomato and simmer for 15 minutes. Stir in the cheese.
  4. Meanwhile heat another nonstick pan to medium and spray with olive oil spray.  Sauté the shrimp over medium heat until no longer pink. 
  5. Add the shrimp, vegetables, and basil to the sauce. 
  6. You can divide the pasta among plates and top with the sauce mixture. OR add the pasta and pasta water to the sauce mixture first.  Then divide the dish among plates.
  7. Top with extra grated cheese.
  8. Note: I served mine with just the vegetables and shrimp sauce.  For my children I mixed some vegetables into the sauce and served their sauce over the linguine noodles.

Carrot Coconut Muffins

I love carrot and I love coconut, so I thought why not combine the two in a muffin. 

Ingredients:

¼ cup orange juice

Zest from 1 orange

1 cup cooked diced carrots

3 large eggs

¼ cup unsweetened applesauce

½ cup unsweetened coconut flakes

1 cup whole wheat flour

1 cup almond flour

1 scoop vanilla protein powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 teaspoon ginger

2 tablespoons coconut sugar

Directions:

  1. Preheat oven to 350 degrees.  Line a muffin tin with liners or spray with nonstick baking spray.
  2. Peel and roughly chop 2-3 large carrots.  Boil for 10 minutes.  Then transfer to a food processor and dice. 
  3. In a large bowl add flours, protein powder, baking soda, salt, coconut sugar, ginger, and cinnamon and mix.
  4. Add carrots, coconut, orange juice, orange zest, eggs, and applesauce.  Mix to combine.
  5. Use a large cookie scooper or measuring cup to fill muffin tins.
  6. Bake for 20 minutes.
  7. Let cool on a wire rack for at least 10 minutes before removing muffins from tins.
  8. Store in an air-tight container.
  9. Enjoy!

Roasted Lemon-Chile Broccoli

Broccoli tastes fantastic when roasted with a little bit of spice.  This is a simple and quick side dish that makes broccoli taste so good you will want to eat a plateful of it.

Recipe adapted from Food Network

Ingredients:

1 head broccoli cut into florets

Olive oil for drizzling

1/8 teaspoon chipotle chili powder

1 lemon zested and cut in half

Salt and pepper

Optional: ¼ cup shredded cheese

Directions:

  1. Preheat the oven to 400 degrees.  Line a baking sheet with aluminum foil and spray with olive oil spray. 
  2. Spread the broccoli on the baking sheet.  Drizzle with olive oil.  Sprinkle with crushed red pepper and lemon zest.  Salt and pepper to taste.
  3. Roast 10-12 minutes.
  4. Squeeze fresh lemon juice over the broccoli.
  5. Optional: Sprinkle shredded cheese over the broccoli for the last few minutes.
  6. Enjoy!

I am always making potato wedges and fries using different combinations of ingredients.  These are simple to prepare and add a little spice to any meal. Recipe adapted from Food Network Ingredients: 2 russet potatoes cut into wedges 1-2 tablespoons extra virgin olive oil 1
