Strawberry Chocolate Energy Balls

Strawberry and chocolate make an excellent pairing.  These energy balls are really two balls smushed into one so you get the flavors from both strawberry and chocolate in one bite.

Ingredients:

Strawberry portion-

½ cup cashews

½ cup old fashioned oats

6 pitted dried dates

¼ cup freeze dried strawberry powder

2 tablespoons reduced fat peanut butter

3 tablespoons light or pure maple syrup

Chocolate portion-

1 scoop chocolate protein powder

1 tablespoon flax seeds

½ cup cocoa almonds

6 pitted dried dates

3 tablespoons light or pure maple syrup

Directions:

Strawberry-

  1. Add cashews, oats, and strawberry powder to food processor.  Pulse to mix.
  2. Add dates, peanut butter, and maple syrup. Pulse to combine.
  3. Add more syrup or peanut butter if mixture seems dry.
  4. Transfer to a medium bowl. 
  5. Refrigerate while you make the chocolate portion.

Chocolate-

  1. Add protein powder, flax seeds, and almonds to food processor.  Pulse to mix.
  2. Add dates and maple syrup.
  3. Add more syrup or dates if mixture appears to dry.
  4. Transfer to the same bowl as strawberry portion.  Put in a mound on the opposite side of the bowl.
  5. Refrigerate for 15 minutes.

Energy Balls-

  1. Use a tablespoon size cookie scooper or spoon to take a little from the strawberry and chocolate portion.  Use your hands to roll into a ball.
  2. Place balls in an airtight container and store in the refrigerator.
