Fall Off the Bone Chicken Thighs

Are you looking for a simple and delicious Sunday night meal?  This chicken bakes slowly, but requires little prep and tastes amazing.  You won’t be able to stop eating these fantastic chicken thighs.

Recipe adapted from Food Network

Ingredients:

2 teaspoons packed light brown sugar

1 teaspoon paprika

½ teaspoon garlic powder

8 boneless, skin on chicken thighs 

2 tablespoons chopped chives

Directions:

  1. Combine the sugar, paprika, garlic powder, 1 tablespoon salt, ½ teaspoon pepper. 
  2. Toss the chicken in the spice mixture until coated. 
  3. Arrange the chicken in a single layer in a 9×13 baking dish. Cover with foil and refrigerate for at least 4 hours or overnight.
  4. Preheat the oven to 300 degrees.
  5. Bake until the chicken is super moist and falling off the bone about 2 hours. 
  6. Remove the baking dish from the oven and remove the foil.  Use a spoon or ladle to remove as much liquid from the dish as possible.  Reserve the liquid. Turn the oven to broil. 
  7. Broil the chicken until the skin is golden brown and slightly crisp for 5 minutes. 
  8. Sprinkle the chicken with chives and serve with the reserved pan juices.
  9. I served this with lemon pepper potatoes and French Onion Green Beans (see recipes in Sides/Salads).

Pomegranate Glazed Salmon with Asparagus Mint Salad

If you know me then you know I love salmon. This recipe is 1000% a keeper. The combination of the pomegranate glaze with the asparagus orange and mint salad is to die for. We had fresh red romaine lettuce from our garden that I placed under my salmon to really top off this dish.

Recipe adapted from Food Network

Ingredients:

1 pound asparagus ends trimmed

1 orange

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon extra virgin olive oil

1 cup frozen lima beans or edamame cooked

¼ cup toasted hazelnuts chopped

¼ cup fresh mint minced

2 tablespoons fresh parsley minced

2 scallions thinly sliced

2 pounds salmon

Pomegranate Glaze-

½ cup pomegranate juice

2 tablespoons honey

2 tablespoons brown sugar

2 tablespoons Dijon mustard

1 teaspoon cornstarch

Salt and pepper

Directions:

  1. Preheat the oven to 350 degrees.  Line a 9×13 baking sheet with aluminum foil.  Spray with olive oil spray.
  2. Whisk the pomegranate juice, honey, sugar, mustard, cornstarch, salt, and pepper in a small saucepan.  Bring to a simmer.  Simmer until thickened about 3 minutes.  Let cool.
  3. Once the glaze has cooled brush the salmon with the glaze.  Bake 30 minutes or until the salmon reaches an internal temperature of 125 degrees.
  4. Bring a pot of water to boil and prepare an ice bath.  Blanch the asparagus by cooking for 3 minutes.  Then put asparagus on the ice bath to cool.  Cut asparagus stalks into thirds once cool.
  5. Zest the orange.  Cut the orange in half.  Juice 1 half of the orange.  Juice the other half of the orange.  Strain to remove the pulp. Transfer juice to a large bowl.
  6. Add the vinegar, mustard, and 1 tablespoon olive oil to the juice.  Whisk to combine.
  7. Add the asparagus, orange segments, lime beans, hazelnuts, mint, parsley, and scallions to the bowl.  Toss to combine. 
  8.  Serve the salmon with the asparagus salad.  Add remaining glaze to the salmon. 
  9. Enjoy!

I think peanut butter goes with just about everything.  Peanut butter and blueberry is a wonderful combination when you need a sweet and crunchy snack packed full of protein to fuel your busy days.

Ingredients:

½ cup old fashioned oats

1 scoop peanut butter powder

1 scoop vanilla protein powder

½ cup dried banana chips

½ cup cashews

1 tablespoon flax seeds

6 dried dates

½ cup pure or light maple syrup

2 tablespoons natural or reduced fat peanut butter

¼ cup dried blueberries

Directions:

  1. Add oats, cashews, banana chips, and flax seeds to food processor.  Pulse to chop and mix.
  2. Add the dates and peanut butter.  Pulse to chop the dates and mix in the peanut butter.
  3. Add the protein powder, powdered peanut butter, and maple syrup.  Pulse to mix.
  4. Add the dried blue berries.  Pulse to mix.
  5. If the mixture is too dry you can add more peanut butter, syrup, or dates.
  6. Use an ice cream scoop or cookie scooper to form balls. If the mixture is too sticky refrigerate for 15 minutes and then try again.
  7. Store the balls in an air-tight container.
  8. Enjoy!
