Blackened Tilapia

Blackened Tilapia

If you don’t have a blackened spice blend on hand then you can make your own using the spices in this recipe.  The tilapia was full of flavor with just the right amount of spice.

Recipe adapted from Food Network

Ingredients:

6 tilapia filets

½ lemon juiced

1 tablespoon grapeseed oil

Blackening Spice Mix-

1 tablespoon smoked paprika

½ teaspoon salt

½ tablespoon onion powder

½ teaspoon black pepper

½ teaspoon cayenne pepper

½ teaspoon ground thyme

1 teaspoon dried oregano

½ teaspoon garlic powder

Directions:

  1. Mix spices in a small bowl.
  2. Preheat grill to max heat.  (I used my Ninja grill.)
  3. Drizzle grapeseed oil over tilapia and rub in or spray with olive oil spray.
  4. Sprinkle seasoning over fish.  Lightly rub in.  Let the fish sit while the grill pre-heats.
  5. Grill fish 3 minutes per side.
  6. Drizzle fresh lemon juice over fish.
  7. Enjoy!

Roasted carrots and radishes fresh from the garden with some olive oil and chili lime seasoning are easy to prepare and packed with flavor. Ingredients: 1-2 pounds carrots and radishes peeled and halved Zest from 1 lime 1-2 tablespoons extra virgin olive oil 1 tablespoon 

Eggplant Hummus

Eggplant Hummus

I eat fresh veggies with hummus almost every day.  This eggplant hummus is light, delicious, and easy to prepare.

Recipe adapted from Food Network

Ingredients:

6-8 white and/or green eggplant

1 ½ cups cannellini beans

3 tablespoons tahini

3 tablespoons lemon juice

1 tablespoon fresh flat leaf parsley

¼ teaspoon black pepper

½ teaspoon salt

¼ cup extra virgin olive oil

1 clove garlic diced

Directions:

  1. Preheat oven to 425 degrees.  Pierce each eggplant with a fork twice in the middle.
  2. Place eggplant on a rimmed and lined baking sheet.
  3. Roast eggplant until soft 30-40 minutes depending on the size of the eggplants.
  4. Let eggplants cool.
  5. Slice eggplants lengthwise and scoop out the insides.  Transfer flesh to food processor.
  6. Add beans, tahini, lemon juice, parsley, salt, pepper, and garlic to food processor.  Pulse to mix.
  7. Slowly add in olive oil until you reach the desired consistency.
  8. Store in an airtight container in the refrigerator.
  9. Serve with fresh veggies, crackers, or on a salad in place of salad dressing.

This dish makes everyone happy.  Veggie lovers will like the eggplant and meat lovers will enjoy the chicken parm.  You can even eat a little of both.  This can be a meal on its own or served over pasta, veggie noodles, or sauteed vegetables. Recipe 

Creamy Baked Macaroni and Cheese

Creamy Baked Macaroni and Cheese

Cheesy and creamy baked macaroni cheese is a dish I often make for big family dinners.  My kids don’t like a breadcrumb topping so I focused on the cream and cheese in this dish.

Recipe adapted from Food Network

Ingredients:

1 pound elbow macaroni

2 ½ cups half and half

8 ounces reduced fat cream cheese at room temperature

2 8 ounce bags shredded macaroni and cheese mixture

Directions:

  1. Bring a large pot of salted water to a boil. Cook pasta to al dente according to package directions.  Reserve ¾ cups pasta water.
  2. Heat half and half in a large saucepan over medium heat until it comes to a simmer. Simmer for 15 minutes.
  3. Add cream cheese and stir until it is melted.
  4. Add 1 ½ bags of the shredded cheese.  Stir as it melts until the sauce is smooth.
  5. Add macaroni and pasta water to the saucepan.  Stir to mix.
  6. Transfer the mixture to a 9×13 baking dish.
  7. Sprinkle remaining cheese on top.
  8. If baking now bake at 425 for 10 minutes.  If prepping ahead of time and heating after refrigerating bake for 40-45 minutes until all cheese is melted and the dish is heated through.
