Cheesy Zucchini Steaks
This is a super easy and delicious side dish that takes only minutes to prepare. I baked my zucchini, but you could grill to enhance the flavor if you wanted to.
Ingredients:
2 large zucchini sliced in half lengthwise
1 tablespoon hamburger (or other seasoning)
olive oil spray
1/3 cup shredded cheddar cheese
4 slices provolone cheese cut in half
Directions:
- Preheat the oven to 425 degrees.
- Line a baking sheet with aluminum foil if baking zucchini.
- Set the zucchini skin side down on the baking sheet.
- Score the zucchini with crosshatch marks using a sharp knife.
- Spray the zucchini liberally with olive oil spray.
- Sprinkle the hamburger seasoning over the zucchini.
- Sprinkle the shredded cheese over the zucchini.
- Top with the slices of provolone cheese.
- Bake for 10 minutes.
- Change the oven to broil on high. Broil for 2 minutes to brown and melt the cheese.
- Remove from the oven and allow to rest for 1-2 minutes before slicing.
