Cheesy Zucchini Steaks

This is a super easy and delicious side dish that takes only minutes to prepare. I baked my zucchini, but you could grill to enhance the flavor if you wanted to.

Ingredients:

2 large zucchini sliced in half lengthwise

1 tablespoon hamburger (or other seasoning)

olive oil spray

1/3 cup shredded cheddar cheese

4 slices provolone cheese cut in half

Directions:

  1. Preheat the oven to 425 degrees.
  2. Line a baking sheet with aluminum foil if baking zucchini.
  3. Set the zucchini skin side down on the baking sheet.
  4. Score the zucchini with crosshatch marks using a sharp knife.
  5. Spray the zucchini liberally with olive oil spray.
  6. Sprinkle the hamburger seasoning over the zucchini.
  7. Sprinkle the shredded cheese over the zucchini.
  8. Top with the slices of provolone cheese.
  9. Bake for 10 minutes.
  10. Change the oven to broil on high. Broil for 2 minutes to brown and melt the cheese.
  11. Remove from the oven and allow to rest for 1-2 minutes before slicing.
  12. Enjoy!
