Taco and Cornbread Casserole

During the week I love easy dinners that my kids can throw in the oven when they get home. This tasty casserole combines the flavors of tacos with a sweet cornbread topping.

Ingredients:

2 pounds lean ground beef

2-3 tablespoons taco seasoning

1 cup plain nonfat Greek yogurt

1 cup salsa

1-2 cups shredded cheese (Mexican blend)

2 boxes Jiffy corn mix with ingredients listed on the box

Optional: Diced peppers and onions

Directions:

  1. Brown ground beef in a nonstick skillet. Break up as it cooks.
  2. Drain grease and then add taco seasoning and mix it in.
  3. Spread meat in the base of a 9×13 pan.
  4. Spread Greek yogurt over the meat.
  5. Spread salsa over the meat.
  6. Spread shredded cheese over the salsa.
  7. Mix ingredients for corn mix together in a medium bowl. Spread the corn muffin mix on top.
  8. Spray aluminum foil with nonstick spray. Cover tightly.
  9. Bake covered for 45 minutes to an hour until the topping is cooked through.
  10. Let rest for at least 5 minutes before serving after removing from the oven.
