Taco and Cornbread Casserole
During the week I love easy dinners that my kids can throw in the oven when they get home. This tasty casserole combines the flavors of tacos with a sweet cornbread topping.
Ingredients:
2 pounds lean ground beef
2-3 tablespoons taco seasoning
1 cup plain nonfat Greek yogurt
1 cup salsa
1-2 cups shredded cheese (Mexican blend)
2 boxes Jiffy corn mix with ingredients listed on the box
Optional: Diced peppers and onions
Directions:
- Brown ground beef in a nonstick skillet. Break up as it cooks.
- Drain grease and then add taco seasoning and mix it in.
- Spread meat in the base of a 9×13 pan.
- Spread Greek yogurt over the meat.
- Spread salsa over the meat.
- Spread shredded cheese over the salsa.
- Mix ingredients for corn mix together in a medium bowl. Spread the corn muffin mix on top.
- Spray aluminum foil with nonstick spray. Cover tightly.
- Bake covered for 45 minutes to an hour until the topping is cooked through.
- Let rest for at least 5 minutes before serving after removing from the oven.
