April Fool’s Day Lasagna aka Banana Cream Pie

If you want to fool your family on any day of the year this is the perfect dessert.  When I dished this up my family was convinced it was dinner.  Then they took a bite and got a big surprise when they discovered a delicious dessert instead of the savory dish they were expecting.

Recipe adapted from Food Network

Ingredients:

1 3.4 ounce sugar free instant vanilla pudding

1 pound cake cut into ¼ inch slices

20 reduced fat vanilla wafers

¾ cup strawberry jam

¾ cup part skim milk ricotta cheese

2 teaspoons sugar or one packet monk fruit sweetener

2 bananas sliced

¼ cup diced white chocolate chips

2 tablespoons fresh mint diced

Directions:

  1. Cut a pound cake into ¼ inch slices.
  2. Arrange slices in the bottom of a 7×11 baking dish.
  3. Press 20 vanilla wafers into the cake.
  4. Make the box of instant pudding using 2 cups of nonfat milk.
  5. Microwave the strawberry jam for 30 seconds.
  6. Mix the ricotta cheese with the sugar/sweetener.
  7. Spread strawberry jam over the vanilla wafers.
  8. Spread ricotta cheese over the strawberry jam.
  9. Top with one sliced banana.
  10. Spread ½ vanilla pudding over the banana.
  11. Repeat with a layer of cake.
  12. Press another 20 wafers into the cake.
  13. Top with another sliced banana.
  14. Spread the remainder of the vanilla pudding on top.
  15. Sprinkle the chopped white chocolate chips and mint over the top.
  16. Chill for at least 2 hours before serving.

These waffles have a fantastic texture and flavor.  They taste divine with Greek vanilla yogurt, fresh fruit, and even when topped with peanut butter and jam.  My kids inhaled these waffles and asked for more. Recipe adapted from Fixate Ingredients: 2 cups old fashioned oats

I am always sneaking vegetables into every dish imaginable.  This is a super easy scramble that is full of flavor.  If you don’t have Everything Bagel seasoning I would highly suggest you buy some. Feel free to mix and match using vegetables you have on

If you love root beer floats then you will love this light and simple to prepare pie. 

Recipe adapted from Food Network

Ingredients:

Crust-

18 reduced fat cinnamon or plain graham crackers

4 tablespoons extra virgin coconut oil melted

Filling

2 cups cold heavy cream

2/3 cup confectioners’ sugar

1 cup root beer chilled

¼ cup skim milk

1 3.4 ounce package sugar free instant vanilla pudding

Optional: 2 teaspoons root beer extract

Garnish

8 maraschino cherries

Directions:

  1. Preheat the oven to 350 degrees.
  2. Crust– Pulse the graham crackers to a fine dust in a food processor.  Add the melted coconut oil.  Pulse to mix. Press the crumb mixture into a 9-inch pie plate gently pressing them down with a spatula. Bake for 5 minutes.  Let cool/chill for 20 minutes.
  3. Filling– Add cream and confectioners sugar to a large mixer.  Use the whisk attachment to whip until firm peaks form. In another bool whisk the root beer, milk, and root beer extract (if you found this, I did not).  Once the mixture is thick, fold 2 cups of the whipped cream into the root beer mixture.  Pour the filling over the crust.  Top with some of the extra whipped cream.
  4. Garnish– Top with cherries spread around the edges with 1 in the center.
  5. Chill for at least 2 hours before enjoying.

The spices really pop in these muffins! The warm spices and apple taste great in the morning or any time of day. I hadn’t combined sweet potato and apple before, but the combination will definitely be repeated. Ingredients: 1 sweet potato 1 apple 1 cup

Pretzel crusted air fried chicken is crunchy, salty, and a little sweet.  These chicken tenders are easy to prepare and taste great. Ingredients- 8-12 chicken tenders 2 eggs 1-2 cups crushed pretzels Dipping sauce- honey mustard, ketchup, barbeque sauce Directions: Crush pretzels in a food 

Curried Tofu and Apple Salad/Wraps

Curried Tofu and Apple Salad/Wraps

I have had curried chicken and apple wraps and salad before, so I decided to try using tofu instead of chicken for a new meal.  This was so insanely delicious.  It works for lunch or dinner as you can make a wrap or serve the curry mixture over a spinach salad.

Recipe adapted from Food Network

Ingredients:

1 block firm tofu drained

1/3 cup mango jam

1/3 cup nonfat plain Greek yogurt

2 tablespoons curry powder (divided)

3 tablespoons curry powder (divided)

1 tablespoon honey

1-2 tablespoons fresh lime juice

1 teaspoon salt

1 can low sodium chick peas drained

4 green onions diced

¼ cup fresh mint chopped

¼ cup golden raisins

1 apple (peeled or unpeeled) your choice diced

Directions:

  1. Drain the tofu.  Place on paper towels and cover with paper towels to remove excess water. 
  2. Dice tofu into 1 inch cubes.
  3. Mix 2 tablespoons olive oil, 1 tablespoon honey, and 1 tablespoon curry powder in a small dish.  Pour the curry mixture over the tofu to marinate for at least 30 minutes.
  4. Mix mango jam, Greek yogurt, salt, 1 tablespoon curry powder, and lime juice in a large bowl. 
  5. Add apple, raisins, mint, and chick peas. 
  6. Air fry the tofu at 390 degrees for 20 minutes (10 minutes on each side). 
  7. Add the tofu and green onions.  Mix
  8. Serve on a wrap or over a bed of spinach to make a salad.
