A good dose of protein in the morning powers me through my workouts.  These lemon blueberry muffins are tasty and loaded with nutrients. Ingredients: 2 large eggs 1/3 cup crunchy natural peanut butter ¾ cup nonfat vanilla Greek yogurt ¼ cup truvia or granulated sugar

Grilled Cabbage Steak Salad with Chipotle Dressing

Grilled cabbage is a fantastic base for a salad.  I topped my grilled cabbage with corn, bell peppers, and cherry tomatoes.

Ingredients:

1 green cabbage sliced into 1 inch steaks

1 teaspoon onion powder

1 teaspoon garlic powder

Olive oil spray

Cherry tomatoes

1 bell pepper sliced

1 cup sweet corn

Chipotle Dressing-

6 tablespoons plain nonfat Greek yogurt

1 chipotle pepper, 1 tablespoon adobo sauce

1 tablespoon honey

2 tablespoons lime juice

Directions:

  1. Preheat grill to high heat and spray with nonstick spray.
  2. Spray cabbage steaks with olive oil on both sides. Sprinkle with garlic and onion powder.
  3. Grill for 2-3 minutes per side.
  4. Add yogurt, chipotle, adobo sauce, honey, and lime juice to a food processor and pulse to mix.
  5. Top cabbage steaks with corn, bell peppers, cherry tomatoes, and chipotle dressing.
  6. Store any leftover dressing in the refrigerator.

I love crab cakes and these are amazing!  The remoulade added a zing to the crab cakes and the succotash was an excellent side dish. Ingredients: Crab Cakes- 1 sleeve whole wheat Ritz crackers 1 pound lump crab meat 1 egg lightly beaten ½ plain

If you are craving a hearty, fluffy, meaty pizza then you MUST try this dish! My boys absolutely devoured huge slices of this pizza pie. Ingredients: 1 package frozen puff pasty thawed 1/2 to 1 bell pepper diced ½ onion diced 1 garlic clove minced

Fiesta Burgers

If you are craving a burger and fajita flavors then this is the dinner for you.  These burgers are simple to make and easy to customize to your liking.

Ingredients:

1 pound lean ground beef (93%)

¼ cup salsa

1 cup Tostito chips made into crumbs

4-5 pepper jack cracker slices

Top with salsa, guacamole, plain nonfat Greek yogurt

Serve with nachos or zachos (zucchini nachos)

Directions:

  1. Use a food processor to crush Tostitos. 
  2. Add crumbs to a large bowl with ground beef and mash together. 
  3. Add ¼ cup salsa and mix well.
  4. Divide into 4-5 patties.  Smush the patties and place a cracker size slice of cheese in the center.  Fold the patty up over the cheese.
  5. Grill on high for 5-7 minutes.
  6. Serve over a bed of romaine lettuce with cherry tomatoes and diced peppers or on a bun.
  7. I enjoyed zachos with my burger and made nachos for my children.

My 7 year old wanted a lemon and blueberry cake for his jungle themed birthday (hence the green icing).  So I found a recipe that sounded delicious with two layers of a lemon blueberry cake, lemon cream cheese icing, and blueberry filing. Ingredients: Cake- 1

I have made sweet potato waffles a few time and this version did not disappoint.  These waffles were filled with sweet potato and egg whites to make them light and fluffy.  Ingredients: 1 ½ cups mashed sweet potatoes 2 cups all purpose flour 1 tablespoon

Ham, Egg, and Cheese Muffins

My kids love egg muffins.  These are so easy to make.  We had leftover ham from Easter dinner, so I chopped up some to add to the base of each muffin tin.  I added chopped spinach to my muffin cups to add some veggies to my plate.

Ingredients:

7 eggs

½ cup egg whites (for 4 spinach/egg muffins)

1-2 cups diced ham

1 cup chopped spinach

¼ milk

½ cup shredded cheddar

Directions:

  1. Preheat oven to 375 degrees.  Spray muffin tins with nonstick spray.
  2. Spoon diced ham into each muffin tin.
  3. Whisk the eggs and milk.  Pour over 8 of the muffin tins.  Top with a tablespoon of shredded cheddar.
  4. Whisk egg whites and spinach.  Pour over 4 remaining muffin tins.  Top with cheddar cheese.
  5. Bake for 20 minutes.
  6. Allow egg muffins to sit for 5 minutes before removing from muffin tins.
  7. Enjoy!
