Key Lime Coleslaw
I make coleslaws all the time in the spring and summer, and I love varying the flavors of the vinaigrette. This coleslaw was sweet and just slightly spicy with a light vinaigrette that pairs well with seafood or as a light meal.
Ingredients:
Coleslaw-
1 bag coleslaw mix
½ cup matchstick carrots
½ cup matchstick radishes
3-4 banana peppers sliced
1 jalapeno pepper thinly sliced
Vinaigrette-
1 lime zested and juiced
2 tablespoons key lime balsamic vinegar
2 tablespoons blood orange olive oil
2 tablespoons honey
Directions:
- Mix all coleslaw ingredients in a large bowl.
- Whisk vinaigrette ingredients in a small bowl. Pour the vinaigrette over the coleslaw and mix well.
- Refrigerate in a covered bowl until ready to serve.
- Enjoy!
