Old Bay Shrimp Burgers

<strong>Old Bay Shrimp Burgers</strong>

I heard of shrimp burgers years ago when we first traveled to the Emerald Isle area; however, I was told I wouldn’t like them since they are usually fried in restaurants.  I made a batch using the air-fryer today and the boys loved them!  We will be making these again for sure.

Ingredients:

2 pounds shrimp peeled and deveined

4 scallions thinly sliced

2 eggs lightly beaten

2/3 cup panko

1 teaspoon-1tablespoon Old Bay

½ teaspoon garlic powder

½ teaspoon salt

2 tablespoons lemon juice

Serve on a bun or with lettuce, tomatoes, onions, cocktail sauce, etc…

Directions:

  1. Pulse half of the shrimp in a food processor.  Roughly chop the remaining shrimp. 
  2. Mix all of the shrimp, scallions, Old Bay, garlic, salt, lemon juice, and eggs in a large bowl.  Fold in the breadcrumbs and mix.
  3. Refrigerate bowl for 10-30 minutes.
  4. Use a large cookie scooper or your hands to make 8 patties.
  5. Freeze patties on a baking sheet for 30 minutes.
  6. Spray air fryer basked with nonstick spray.  Arrange patties in the basket and spray with olive oil or other spray.
  7. Air fry at 370 for 10-15 minutes until shrimp burgers are lightly golden.
  8. Serve on a bun or a bed of lettuce with tomatoes, onions, cocktail sauce, etc…
