I think this may be my favorite salmon recipe! OMG the glaze is so delicious.  This salmon was better than any salmon I have ever made at home or had at a restaurant.  Ingredients: Triple Citrus Glaze- ¾ cup orange juice ¼ cup fresh lemon

Baked Crunchy and Sweet Salmon

I love salmon regardless of how it is cooked.  This salmon was packed with flavor and the crunchy topping made you keep going back for more.

Ingredients:

2 pounds salon filet

2 tablespoons light brown sugar

1 teaspoon paprika

½ teaspoon garlic powder

1/8 teaspoon cayenne pepper

Salt and pepper

¼ cup panko breadcrumbs

2-4 tablespoons fresh parsley

1 tablespoon extra-virgin olive oil

1 tablespoon Dijon mustard

Directions:

  1. Preheat oven to 375 degrees and line a 9×13 glass baking dish with aluminum foil. Spray foil with olive oil spray.
  2. Place the salmon skin side down in the baking dish.
  3. Spread Dijon mustard all over fish.
  4. Mix the brown sugar, paprika, garlic powder, cayenne pepper, salt, and pepper in a small bowl.
  5. Mix the breadcrumbs, parsley, and olive oil in a separate bowl.
  6. Sprinkle the brown sugar mixture all over the fish and gently press it down.
  7. Top with the breadcrumb’s mixture.
  8. Bake for 35-40 minutes until the salmon is firm and flakes when pressed.
  9. Enjoy!

Soy Molasses Salmon

This salmon disappeared in the blink of an eye!  The marinade left wonderful flavors and I may have to make it again just to have seconds. Luckily the marinade recipe made so much I have enough unused and leftover that I can make this again or use the marinade in another recipe.

Recipe adapted from Food Network

Ingredients:

2 pounds salmon

1/3 cup reduced sodium soy sauce

¼ cup molasses

1 tablespoon sesame oil

2 teaspoons minced garlic

1 teaspoon ginger powder

1 teaspoon fish sauce

1 teaspoon rice wine vinegar

2 teaspoons honey

Directions:

  1. Preheat oven to 350 degrees.  Line a 9×13 glass baking dish with aluminum foil.  Spray with olive oil spray.
  2. Whisk all ingredients to make the marinade in a medium bowl.
  3. Cover the salmon with the marinade and refrigerate for at least an hour or overnight.
  4. Add a little more marinade before cooking.
  5. Bake 40-45 minutes until salmon is light pink and flaky.
