My kids love chocolate chip cookies, so I decided to try blondies using browned butter and a trio of chocolate chips (dark morsels, semi-sweet mini chips, and milk chocolate chips). These are not healthy in any means, but they do taste great.
Recipe adapted from Food Network
Ingredients:
3 sticks unsalted butter
3 cups lightly packed dark brown sugar
3 large eggs
1 ½ teaspoons vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon kosher salt
1 ½ cups chocolate chips (I used a half cup each of dark chocolate morsels, mini semi-sweet, and milk chocolate chips)
Directions:
Brown the butter in a medium saucepan by cooking on medium low heat until medium-brown in color and melted through. Allow to cool.
Preheat the oven to 350 and grease a 9×13 baking pan.
Beat the butter and brown sugar in a stand mixer with a paddle attachment at medium until creamy.
Add the eggs and vanilla beating on medium and scraping down the sides.
Add the baking powder and salt. Add the flour ¼ cup at a time on low speed.
Fold in the chocolate chips.
Press the mixture in the prepared pan spreading to an even layer.
Bake 35-40 minutes until a toothpick inserted in the center comes out with only a few crumbs.
Let cool on a wire rack.
Store in a covered container or freeze individual squares.
