Peanut Butter and Cherry Energy Balls

Peanut Butter and Cherry Energy Balls

Do you need a quick energy boost or a snack on the go? Energy balls are a bite size protein packed snack that even kids will love. These require no baking or fancy equipment and are ready in minutes.

Cook Time: None

Prep Time: 15 minutes

Ingredients: (customize to suit your tastes)

1/2 cup creamy peanut butter (cashew, almond, etc..)

1/4 cup maple syrup

1 cup old fashioned oats

1 scoop vanilla protein powder

2 tablespoons powdered peanut butter

2 tablespoons chia seeds

1/4 cup dried cherries (or dried fruit of your choice)

Directions:

  1. Add all ingredients to a large mixing bowl. Gently combine. If too dry add more syrup. If too wet add more oats.
  2. Place in the refrigerator to chill for 5-10 minutes. Use an ice cream scooper to help you form balls or roll balls with your hand.
  3. Eat a few now and store some for a snack later.
  4. Store in an air-tight container in the fridge.

Hi, my name is Ashley and I am an incredibly busy mom of 8 living in North Carolina. I am blessed with 5 boys and 3 stepdaughters. I am an exceptional children (special education) teacher by trade, but cooking is my passion.

My days are spent taking care of my children, exercising, working, and managing a busy household. When I have time to cook I enjoy making dishes from scratch, sneaking veggies into entrees, and trying to lighten up desserts when I can.
