Portobello Mushroom Omelet with Goat Cheese

I don’t know about you, but my children and I love omelets. I bought an omelet maker last year that quickly became my best friend. I make omelets all the time with different concoctions. This was an omelet I will definitely make again.
Recipe adapted from Fixate Portobello mushroom and goat cheese omelet
Cook Time: 10 minutes
Prep Time: 15 minutes
Ingredients:
3 large eggs
1 cup sauteed sliced portobello mushrooms
1/4 cup diced onion
2 tablespoons garlic and herb goat cheese
4 basil leaves chopped (1 tablespoon basil)
Directions:
- Spray a small sauté pan with olive oil. Cook mushrooms on medium to low heat until softened and browned approximatively 10 minutes.
- Beat 3 eggs in a small bowl. Add mushrooms, onion, basil, and goat cheese.
- Cook in omelet maker 10 minutes or until done. This made 2 crescent shaped omelets.
