White Chicken Chili

White Chicken Chili

This is one of my favorite chili recipes that I make at least a few times each year, but somehow I never typed the recipe.

INGREDIENTS:

1-2 pounds Boneless skinless chicken thighs

1 can black beans

1 can cannelloni beans

1 cup frozen corn

1 can diced tomatoes with chilies

2 tablespoons ranch seasoning powder

1 tablespoon chili powder

8 ounces reduced fat cream cheese

2 cups chicken broth

Toppings: shredded cheese, scallions, sour cream

Optional: Serve with corn muffins

DIRECTIONS:

  1. Spray crockpot with nonstick spray.
  2. Drain and rinse black and cannelloni beans.
  3. Add chicken, beans, tomatoes, corn, Ranch powder, chicken broth, and chili powder.
  4. Cook on low for 7 hours.
  5. Shredded the chicken with forks to bite size pieces.
  6. Cube cream cheese and add to chili.
  7. Stir well to distribute cream cheese.
  8. Add toppings when serving.

Note: Stir occasionally throughout the day if you are able to.
