White Chicken Chili

This is one of my favorite chili recipes that I make at least a few times each year, but somehow I never typed the recipe.
INGREDIENTS:
1-2 pounds Boneless skinless chicken thighs
1 can black beans
1 can cannelloni beans
1 cup frozen corn
1 can diced tomatoes with chilies
2 tablespoons ranch seasoning powder
1 tablespoon chili powder
8 ounces reduced fat cream cheese
2 cups chicken broth
Toppings: shredded cheese, scallions, sour cream
Optional: Serve with corn muffins
DIRECTIONS:
- Spray crockpot with nonstick spray.
- Drain and rinse black and cannelloni beans.
- Add chicken, beans, tomatoes, corn, Ranch powder, chicken broth, and chili powder.
- Cook on low for 7 hours.
- Shredded the chicken with forks to bite size pieces.
- Cube cream cheese and add to chili.
- Stir well to distribute cream cheese.
- Add toppings when serving.
Note: Stir occasionally throughout the day if you are able to.
