Chocolate Whoopie Pies with Cookies and Cream Filling

Whoopie pies are so light and fluffy.  These are filled with an Oreo and cream cheese filling that you won’t be able to resist.  These were the perfect snow day treat.

Ingredients:

Whoopie Pie-

1 ½ cups all purpose flour

2/3 cup unsweetened cocoa powder

1 scoop chocolate protein powder

1 ½ teaspoons baking soda

1 teaspoon espresso powder

½ teaspoon salt

½ cup (1 stick) unsalted butter softened

2 eggs

1 ½ teaspoons vanilla extract

1 cup nonfat vanilla Greek yogurt

Filling-

8 ounces reduced fat cream cheese

12 Oreos (I used 6 mega stuffed and 6 chocolate)

2 cups powdered sugar

Directions:

  1. Line two large baking sheets with parchment paper and preheat the oven to 350 degrees.

2. Add flour, protein powder, cocoa powder, salt, baking soda, and espresso powder to a large bowl and whisk to combine.

3. Beat butter and granulated sugar in a stand mixer on medium speed for 5 minutes. 

4. Add the eggs one after a time beating after each egg.

5. Add vanilla, half the flour mixture, and half the yogurt.  Mix to combine.

6. Add the remaining flour mixture and yogurt and mix to combine scraping down the sides of the bowl with a spatula.

7. Use a tablespoon cookie scooper to place balls 2 inches apart on the baking sheets.

8. Bake 9-11 minutes or until cookies spring back when lightly touched.  Cool for at least 2 minutes on the baking sheet then transfer to a wire rack to cool.

9. Flip over half of the whoopie pies as they cool.

10. Add cream cheese and powdered sugar to a stand mixer.  Mix on medium until light and fluffy.

11. Pulse to crush Oreos in a food processor until small pieces/crumbs. 

12. Fold the Oreo crumbs into the cream cheese mixture.

13. Use a tablespoon cookie scooper to place a ball of the filling on half of the whoopie pies.

14. Top each whoopie pie to make sandwiches and gently press down.
