Grilled pineapple, bell pepper, teriyaki, and ground turkey breast pair to make a tasty and healthy burger. I served my burger on bibb lettuce, but you could use a bun too.
Recipe adapted from Food Network
Ingredients:
Burgers:
1 pound ground turkey breast (you can use ground beef if you prefer)
½ cup diced carrots
½ cup diced sweet onion
½ cup diced bell pepper
2 tablespoons teriyaki sauce
¼ cup plain bread crumbs
4 slices cheddar, provolone, or other cheese
Topping-
1 can pineapple rings in pineapple juice
1 bell pepper cut in rings
2 tablespoons teriyaki sauce
Sauce-
½ cup plain nonfat Greek yogurt
1 tablespoon teriyaki sauce
1 tablespoon honey
1/8 teaspoon cayenne pepper
To serve: bibb lettuce, buns, …
Directions:
Burgers-
- Cook diced peppers, onions, and carrots in a nonstick pan over medium heat for 5 minutes. Toss with 2 tablespoons teriyaki sauce. Let cool.
- Add turkey breast, cooked vegetables, and breadcrumbs to a large bowl. Mix well to evenly combine.
- Divide meat mixture into 4 balls. Smush into 4 patties.
- Refrigerate until ready to grill. I often freeze turkey burgers for 15 minutes prior to grilling to firm them up.
- Grill for 5 minutes on each side. Top with a slice of cheese during the last minute of grilling.
Toppings-
- Heat a grill at medium heat.
- Place pineapple and peppers in a dish. Drizzle teriyaki sauce over and let soak in for a few minutes.
- Grill for 2-3 minutes per side.
Sauce-
- Add yogurt, honey, teriyaki, and pepper to a small bowl. Mix to combine.
- Refrigerate until ready to serve.
- Leftover sauce makes a tasty light salad dressing or vegetable dip.
Serving-
- Place a layer of sauce on bun/lettuce. Place burger over sauce. Top with grilled pepper and pineapple.
