Chai tea is my favorite middle of the day drink when I need an energy boost or to warm up. These energy balls have the warm flavors of chai tea combined with protein power from nuts.
Ingredients:
½ cup old fashioned oats
½ cup roasted cashews
½ cup roasted almonds
2 scoops vanilla protein powder
1 tablespoon flax seeds
½ cup nut butter
¼ cup brewed chai tea
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
2 tablespoons coconut oil
2 tablespoons honey
1 teaspoon vanilla extract
Directions:
Add oats, cashews, and almonds to food processor. Pulse to dice nuts.
Add protein powder, flax seeds, spices. Pulse quickly to mix.
Melt coconut oil, honey, nut butter, vanilla extract, and tea for 30 seconds in the microwave. Add to food processor and pulse to combine.
Refrigerate for 15-30 minutes in an air-tight container to allow mixture to harden.
Use an ice cream scoop or cookie scooper to form balls. Store in an air-tight container.
Optional: Melt ¼ cup white chocolate chips and dip the balls in chocolate. Then refrigerate.
