Taco Potatoes
Taco seasoning over roasted or air-fried potato wedges make for a simple and innovative side dish. We dipped these in salsa, you could also add some melted cheese to the warm potatoes for a potato nacho vibe.
Ingredients:
3-4 russet potatoes
1-2 tablespoons olive oil
1-2 tablespoons taco seasoning
Directions:
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
- Cut potatoes into wedges. Add potatoes to a large bowl. Drizzle with olive oil. Shake to distribute. Sprinkle taco seasoning over potatoes. Shake to ensure all potatoes get some seasoning.
- Spray baking sheet with olive oil spray. Spread potatoes out in an even layer.
- Bake 35-40 minutes.
- Serve with salsa, shredded cheese, avocado, nonfat plain Greek yogurt….
