Chai Protein Balls
Chai tea is my favorite middle of the day drink when I need an energy boost or to warm up. These energy balls have the warm flavors of chai tea combined with protein power from nuts.
Ingredients:
½ cup old fashioned oats
½ cup roasted cashews
½ cup roasted almonds
2 scoops vanilla protein powder
1 tablespoon flax seeds
½ cup nut butter
¼ cup brewed chai tea
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
2 tablespoons coconut oil
2 tablespoons honey
1 teaspoon vanilla extract
Directions:
- Add oats, cashews, and almonds to food processor. Pulse to dice nuts.
- Add protein powder, flax seeds, spices. Pulse quickly to mix.
- Melt coconut oil, honey, nut butter, vanilla extract, and tea for 30 seconds in the microwave. Add to food processor and pulse to combine.
- Refrigerate for 15-30 minutes in an air-tight container to allow mixture to harden.
- Use an ice cream scoop or cookie scooper to form balls. Store in an air-tight container.
- Optional: Melt ¼ cup white chocolate chips and dip the balls in chocolate. Then refrigerate.
