Cheesy Baked Mashed Potatoes

My children devour mashed potatoes.  This recipe used a mixture of golden and russet potatoes mixed with mozzarella cheese and parmesan cheese.  The result is a creamy and delicious baked potato dish that we absolutely devoured. 

Ingredients: 

3 russet potatoes peeled and cubed

3 golden potatoes peeled and cubes

1 tablespoon butter

4 tablespoons butter

½ cup nonfat milk

1 cup shredded mozzarella cheese divided

¼ cup grated parmesan cheese divided

Salt to taste

Directions: 

  1. Add potatoes to a large pot and cover with water.  Add 1 tablespoon of salt and bring to a boil.  Boli for 10-15 minutes until potatoes soften. 
  2. Drain potatoes and add to a stand mixer with 4 tablespoons of butter and milk.  Whip until potatoes are mashed.  Scrape down the sides as needed.
  3. Meanwhile preheat oven to 400 degrees.  
  4. Add one tablespoon of butter to an 8×8 dish and place the dish in the oven while it preheats to melt the butter. 
  5. Add ½ of the mozzarella cheese and all but a tablespoon of the parmesan cheese to the mashed potatoes and whisk in. 
  6. Add salt or pepper to taste. 
  7. Transfer the mashed potatoes to the 8×8 dish. 
  8. Sprinkle the remaining mozzarella cheese and parmesan cheese on top. 
  9. Bake for 20-25 minutes or until a golden brown crust begins to develop. 
  10. Allow to cool for 5 minutes before serving. 
  11. Enjoy!!

I love peanut butter and this pie is full of peanut butter flavor with a light and creamy texture.  

Ingredients:

1 graham cracker crust

¼ cup powdered sugar

½ cup peanut butter

1 5 oz box of instant vanilla pudding

3 cups of nonfat milk

1 cup cool whip

1 cup creamy peanut butter

2 cups cool whip topping

Chocolate magic shell

Directions:

  1. Mix powdered sugar and peanut butter together with a fork.  Spread out the mixture in the base of the graham cracker crust. 
  2. Whisk together the pudding, milk, and peanut butter.  Once it reaches a custard like texture gently fold in the whip cream. 
  3. Spread the peanut butter mixture in the pie. 
  4. Spread the remaining whipped cream on top of the pie.  
  5. Refrigerate for at least 2 hours to allow the pie to set. 
  6. Drizzle magic shell over the pie before serving. 
  7. Enjoy!

White Chocolate Chip Cranberry Oatmeal Cookies

These cookies are the perfect mixture of tart and sweet.  By adding oats and using Greek yogurt in place of some of the butter these cookies are something you can enjoy without guilt. 

1 ½ cups almond flour

1 cup all purpose flour

½ cup vanilla protein powder

4 oz unsalted butter at room temperature

4 oz plain nonfat greek yogurt

4 oz unsweetened applesauce

½ cup brown sugar

½ cup granulated sugar

2 eggs

1 teaspoon salt

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon cinnamon

3 cups old fashioned oats

1 cup cranberries

1 cup white chocolate chips

  1. Preheat oven to 375 degrees and line baking sheet with parchment paper. 
  2. Add butter, applesauce, and greek yogurt to a stand mixer.  Mix on medium to combine. 
  3. Add the brown sugar and granulated sugar and mix to combine. 
  4. Add the eggs and mix to combine. 
  5. In a separate bowl whisk together flours, protein powder, salt, baking soda, baking powder, and cinnamon. 
  6. Gradually add the dry ingredients one cup at a time mixing on low until combined.  Scrape the sides and bottom of the bowl. 
  7. Add the oats one cup at a time and mix to combine. 
  8. Add the cranberries and white chocolate chips. 
  9. Use a medium cookie scoop to form balls spaced approximately 2 inches apart on the baking sheet. 
  10. Bake 9-11 minutes until cookies are set. 
  11. Let cookies cool for a few minutes on the parchment paper before transferring to a wire rack to cool completely.
