I love parmesan everything!  This tofu parmesan is simple to prepare and tastes great over zoodles and on a tortilla pizza with other vegetables.  You could also make tofu parmesan subs or serve this over pasta with some of the extra sauce. Recipe adapted from

I love the flavor of curry and this veggie filled curry with tofu was a meal I will happily eat again and again. You can add rice noodles if you are feeding a family. Ingredients: ¼ cup Thai curry paste (I used yellow curry paste) 

Grilled Tofu Parmesan with Sun-Dried Tomato Pesto

Grilled Tofu Parmesan with Sun-Dried Tomato Pesto

This was a super fast weeknight meal that was packed with flavor and nutrients.  I made the pesto the night before for a different recipe, but even that only takes a few minutes to prepare.

Ingredients:

Tofu Parmesan-

1 block extra firm tofu

1 teaspoon Italian seasoning

1 tablespoon extra virgin olive oil (I used a basil infused oil)

½ red onion cut into wedges

Shredded Italian cheese or mozzarella cheese

Sun-Dried Tomato Pesto-

8 ounce jar sun dried tomatoes with oil

2 cups fresh basil

½ cup shredded Parmesan

Salad-

Spinach

Grilled red onion (I sprayed with olive oil and grilled with the tofu)

Cherry tomatoes halved

Directions:

  1. Drain the fluid from the tofu and wrap tofu block in paper towels to remove excess liquid. 
  2. Slice tofu into ½ inch thick slices.
  3. Drizzle basil olive oil over the tofu.
  4. Sprinkle Italian seasoning over the tofu.
  5. Preheat grill to medium heat.
  6. Grill tofu slices for 5 minutes per side.
  7. Pesto-Add the sun dried tomatoes, basil, and parmesan to a food processor.  Pulse to chop and mix. 
  8. Line a small baking sheet with olive oil spray. Lay the tofu slices on the baking sheet.  Top with pesto and shredded cheese.  Broil on high for 5 minutes.
  9. To serve- lay a bed of spinach on a plate.  Top with grilled red onions and halved cherry tomatoes.  Drizzle a few teaspoons of pesto on the spinach.
  10. Place slices of grilled tofu parmesan on top.
  11. Enjoy!

Crispy Air-Fried Tofu

Crispy tofu makes a fantastic addition to a salad or a quick snack you can grab and go.

Recipe adapted from Food Network

Ingredients:

1 lb pound block extra firm tofu

2 tablespoons low sodium soy sauce

1 teaspoon rice vinegar

2 tablespoons toasted sesame oil or vegetable oil

1 tablespoon honey

Directions:

  1. Drain the tofu and wrap in a clean kitchen towel. Place it on a plate or baking dish and put a heavy dish or can on top to help it drain. Let tofu drain for at least 15 minutes. Flip or rearrange the towel as needed to help tofu dry out.
  2. Cut the tofu into 1 inch cubes.
  3. Whisk the soy sauce, oil, vinegar, and honey.
  4. Pour sauce over tofu. Let tofu soak up the marinade for at least 15 minutes.
  5. Preheat air fryer to 370 degrees. Spray a nonstick spray. Arrange tofu in an even layer. Cook for 15-20 minutes shaking the basket periodically. Cook until tofu is a deep golden brown and crispy.
