Nutty Banana Coconut Energy Balls

Nutty Banana Coconut Energy Balls

Energy balls are a quick boost to help me recover after a grueling Beachbody workout or before a nice long run on the elliptical. These energy balls combine banana chips, coconut, and peanut butter for a sweet and crunchy bite.

Ingredients:

½ cup banana chips

½ cup roasted almonds

½ cup old fashioned oats

¼ cup unsweetened coconut

1 scoop vanilla protein powder

2 dates

½ cup peanut butter

1/3 cup pure maple syrup

1 tablespoon flax seeds

1 tablespoon coconut oil

1 teaspoon vanilla extract

Directions:

  1. Add banana chips, almonds, and oats to food processor.  Pulse to chop to small pieces.
  2. Add protein powder, coconut, flax seeds, dates, vanilla extract.  Pulse to mix.
  3. Add peanut butter, maple syrup, and coconut oil.  Pulse to mix.  Add more maple syrup if mixture is too dry.
  4. Use a cookie scooper to form balls. 
  5. Store in an airtight container in the refrigerator.
  6. Enjoy!
