Energy balls are a quick boost to help me recover after a grueling Beachbody workout or before a nice long run on the elliptical. These energy balls combine banana chips, coconut, and peanut butter for a sweet and crunchy bite.
Ingredients:
½ cup banana chips
½ cup roasted almonds
½ cup old fashioned oats
¼ cup unsweetened coconut
1 scoop vanilla protein powder
2 dates
½ cup peanut butter
1/3 cup pure maple syrup
1 tablespoon flax seeds
1 tablespoon coconut oil
1 teaspoon vanilla extract
Directions:
- Add banana chips, almonds, and oats to food processor. Pulse to chop to small pieces.
- Add protein powder, coconut, flax seeds, dates, vanilla extract. Pulse to mix.
- Add peanut butter, maple syrup, and coconut oil. Pulse to mix. Add more maple syrup if mixture is too dry.
- Use a cookie scooper to form balls.
- Store in an airtight container in the refrigerator.
