It is too cold and windy to do anything outside and I didn’t feel like cleaning. So what else is there to do, but create new desserts. This pie has a chocolate graham cracker crust, vanilla pudding and chopped Oreo filling, and is topped with a homemade whipped cream and crushed Oreos.
Ingredients:
1 sleeve chocolate graham crackers
4 tablespoons melted butter
1 package sugar free vanilla pudding
2 cups cold nonfat milk
12 Oreos (8, 4 divided)
1 cup heavy cream
2 tablespoons powdered sugar
½ teaspoon vanilla extract
Directions:
Add graham crackers and melted butter to a food processor and mix until the mixture looks wet.
Press graham crackers into the base of a pie plate and transfer to the refrigerator.
Roughly chop 8 Oreos in a food processor.
Whisk 2 cups milk and pudding mixture for two minutes. Then fold in the chopped Oreos.
Spread pudding mixture over the graham cracker crust. Place in refrigerator while you make the whipped topping.
Add 4 Oreos to the food processor and pulse until crumbs.
Add 1 cup heavy cream, 2 tablespoons powdered sugar, and ½ teaspoon vanilla extract to a stand mixer and whisk on high until light and fluffy.

Note: I made this recipe nut free but you can add a cup of your favorite chopped nuts to the recipe if you desire.

Ingredients:
1 unbaked 9 inch pie crust
2 large eggs
1/2 cup all purpose flour
1/2 cup granulated sugar
1/2 cup dark brown sugar
3/4 cup (1 1/2 sticks) unsalted butter
1 tablespoon vanilla extract
1 cup semi sweet morsels
1 cup semi sweet chunks
1 cup semi sweet mini morsels
Chocolate shell ice cream topping
Directions:
Preheat oven to 325 degrees.
Beat eggs in large mixer on high until foamy. Add softened butter and sugars. Gradually add in flour.
Add in chocolate chips (mix and match using chocolate chips of your choice).
Spoon into pie shell. Bake for 55-60 minutes until toothpick inserted in the center comes out clean.
Cool on wire rack.
Serve warm topped with vanilla ice cream or whipped cream.
Squiggle chocolate shell ice cream topping over the pie to add a final touch.
Suggestion: Microwave cooled slices of pie for 30 seconds before serving to give that just out of the oven feel.
