Apple Pie with Cinnamon Roll Crust and Crumble Topping
I normally scrape pie off the crust, eat the filling, and throw the crust away. The cinnamon roll crust from this apple pie was so good I ate every bite.
Ingredients:
Crust-
1 refrigerated pie crust
2 tablespoons melted extra virgin coconut oil
¼ cup granulated sugar
1 teaspoon ground cinnamon
Flour for rolling
Filling-
4 apples peeled and sliced
3 tablespoons all-purpose flour
1 ½ teaspoons ground cinnamon
Juice of 1 lemon
½ teaspoon ground nutmeg
Topping-
¾ cup old fashioned oats
½ cup all-purpose flour
½ cup light brown sugar
½ teaspoon salt
¼ teaspoon ground cinnamon
2 tablespoons extra virgin coconut oil
Directions:
- Preheat oven to 400 degrees. Spray a pie pan with nonstick spray.
- Unroll the pie crust over a lightly floured surface.
- Drizzle the melted coconut oil over the pie. Then sprinkle with the sugar and cinnamon.
- Roll the crust up. Then cut the roll into ¼ inch slices. Arrange the slices laying flat in a circle. Lightly press and roll the slices together to form a single layer crust.
- Press the crust in the pie plate. Bake for 10-15 minutes.
- Meanwhile add sliced apples to a microwave safe bowl with the cinnamon, nutmeg, and lemon. Microwave the apple slices for 3 minutes.
- Stir flour into the cooked apples.
- Transfer the cooked apples to the pie plate when you remove the crust from the oven.
- Add oats, cinnamon, salt, and brown sugar to a food processor or bowl. Drizzle the melted coconut oil over the mixture and fold it in until the mixture looks wet.
- Sprinkle the topping over the apples.
- Bake on a sheet pan (in case the pie overflows) for 50 minutes.
- Cool pie on a wire rack before serving.
