Apple Pie with Cinnamon Roll Crust and Crumble Topping

I normally scrape pie off the crust, eat the filling, and throw the crust away.  The cinnamon roll crust from this apple pie was so good I ate every bite.

Ingredients:

Crust-

1 refrigerated pie crust

2 tablespoons melted extra virgin coconut oil

¼ cup granulated sugar

1 teaspoon ground cinnamon

Flour for rolling

Filling-

4 apples peeled and sliced

3 tablespoons all-purpose flour

1 ½ teaspoons ground cinnamon

Juice of 1 lemon

½ teaspoon ground nutmeg

Topping-

¾ cup old fashioned oats

½ cup all-purpose flour

½ cup light brown sugar

½ teaspoon salt

¼ teaspoon ground cinnamon

2 tablespoons extra virgin coconut oil

Directions:

  1. Preheat oven to 400 degrees.  Spray a pie pan with nonstick spray.
  2. Unroll the pie crust over a lightly floured surface.
  3. Drizzle the melted coconut oil over the pie.  Then sprinkle with the sugar and cinnamon. 
  4. Roll the crust up.  Then cut the roll into ¼ inch slices.  Arrange the slices laying flat in a circle.  Lightly press and roll the slices together to form a single layer crust. 
  5. Press the crust in the pie plate.  Bake for 10-15 minutes.
  6. Meanwhile add sliced apples to a microwave safe bowl with the cinnamon, nutmeg, and lemon. Microwave the apple slices for 3 minutes.
  7. Stir flour into the cooked apples.
  8. Transfer the cooked apples to the pie plate when you remove the crust from the oven.
  9. Add oats, cinnamon, salt, and brown sugar to a food processor or bowl.  Drizzle the melted coconut oil over the mixture and fold it in until the mixture looks wet. 
  10. Sprinkle the topping over the apples.
  11. Bake on a sheet pan (in case the pie overflows) for 50 minutes.
  12. Cool pie on a wire rack before serving.
  13. Enjoy!
