Wow! This was so delicious I practically licked my plate clean. The mango chimichurri is so good you will want to eat it by the spoonful and a nice grilled steak always makes me smile. I used New York strips, but you can use any cut of steak you like. The herbs I used came fresh from my garden, but you can buy them if you don’t have any growing on hand.
Ingredients:
Steak-
4 New York strip steaks
Olive oil
Salt and pepper
Mango Chimichurri-
1 cup fresh parsley leaves
1 cup fresh cilantro leaves
½ cup fresh mint leaves
2 garlic cloves minced
¼ cup red wine vinegar
2 tablespoons honey
1 teaspoon paprika
½ – ¾ cup olive oil
1 mango diced
Directions:
Remove steak from refrigerator at least 20 minutes prior to grilling.
Rub steaks with olive oil on both sides. Salt and pepper to taste.
Preheat grill to high heat.
Add parsley, cilantro, mint, garlic, red wine vinegar, ½ cup olive oil, honey, and paprika to a food processor. Pulse to mix. Add more olive oil if needed.
Transfer to a medium bowl and fold in diced mango.
Grill steaks for 3-5 minutes per side. Let steaks rest for 5 minutes before serving.
