Grilled Steak with Mango Chimichurri
Wow! This was so delicious I practically licked my plate clean. The mango chimichurri is so good you will want to eat it by the spoonful and a nice grilled steak always makes me smile. I used New York strips, but you can use any cut of steak you like. The herbs I used came fresh from my garden, but you can buy them if you don’t have any growing on hand.
Ingredients:
Steak-
4 New York strip steaks
Olive oil
Salt and pepper
Mango Chimichurri-
1 cup fresh parsley leaves
1 cup fresh cilantro leaves
½ cup fresh mint leaves
2 garlic cloves minced
¼ cup red wine vinegar
2 tablespoons honey
1 teaspoon paprika
½ – ¾ cup olive oil
1 mango diced
Directions:
- Remove steak from refrigerator at least 20 minutes prior to grilling.
- Rub steaks with olive oil on both sides. Salt and pepper to taste.
- Preheat grill to high heat.
- Add parsley, cilantro, mint, garlic, red wine vinegar, ½ cup olive oil, honey, and paprika to a food processor. Pulse to mix. Add more olive oil if needed.
- Transfer to a medium bowl and fold in diced mango.
- Grill steaks for 3-5 minutes per side. Let steaks rest for 5 minutes before serving.
- Top steaks with mango chimichurri.
