Dark Chocolate Espresso Bean Energy Cookie Balls

These energy balls are sure to wake you up.  These taste like chocolate chip cookies, but instead of chocolate chips I used dark chocolate espresso beans.  Yum!!

Ingredients:

1 cup old fashioned oats

2 scoops chocolate protein powder

1 tablespoon flax seeds

1/3 cup peanut butter (I used BetterNButter)

2 teaspoons vanilla extract

1 teaspoon cinnamon

4 large Mejdool dates

¼ cup lite maple syrup

¼ cup dark chocolate espresso beans

Directions:

  1. Add oats, protein powder, flax seeds, and cinnamon to a food processor.  Pulse to mix.
  2. Add dates, vanilla extract, and peanut butter.  Pulse to mix.  Scrape down the sides as needed.
  3. Drizzle the maple syrup around the food processor before you pulse.  Pulse to mix.  Add more peanut butter or maple syrup if mixture looks too dry.
  4. Add espresso beans sprinkling around the food processor.  Pulse quickly to mix in.
  5. Use a cookie scooper to form balls.  I was able to get at least 1 espresso bean I could see in each ball.  You could always press an extra espresso bean into the ball too.
  6. Store the energy balls in an air-tight container in the refrigerator until they disappear.

Strawberry Chocolate Energy Balls

Strawberry Chocolate Energy Balls

Strawberry and chocolate make an excellent pairing.  These energy balls are really two balls smushed into one so you get the flavors from both strawberry and chocolate in one bite.

Ingredients:

Strawberry portion-

½ cup cashews

½ cup old fashioned oats

6 pitted dried dates

¼ cup freeze dried strawberry powder

2 tablespoons reduced fat peanut butter

3 tablespoons light or pure maple syrup

Chocolate portion-

1 scoop chocolate protein powder

1 tablespoon flax seeds

½ cup cocoa almonds

6 pitted dried dates

3 tablespoons light or pure maple syrup

Directions:

Strawberry-

  1. Add cashews, oats, and strawberry powder to food processor.  Pulse to mix.
  2. Add dates, peanut butter, and maple syrup. Pulse to combine.
  3. Add more syrup or peanut butter if mixture seems dry.
  4. Transfer to a medium bowl. 
  5. Refrigerate while you make the chocolate portion.

Chocolate-

  1. Add protein powder, flax seeds, and almonds to food processor.  Pulse to mix.
  2. Add dates and maple syrup.
  3. Add more syrup or dates if mixture appears to dry.
  4. Transfer to the same bowl as strawberry portion.  Put in a mound on the opposite side of the bowl.
  5. Refrigerate for 15 minutes.

Energy Balls-

  1. Use a tablespoon size cookie scooper or spoon to take a little from the strawberry and chocolate portion.  Use your hands to roll into a ball.
  2. Place balls in an airtight container and store in the refrigerator.

Hazelnuts pair so well with chocolate! These nutty energy balls provide a nice sweet crunchy to go snack for any time of day. Ingredients: 1 cup old fashioned oats ¼ cup roasted cashews 1/3 to ½ cup Nutella 1 scoop vanilla protein powder 2 tablespoons

Nutty Energy Balls

These nutty energy balls combine almonds, cashews, and pecans to create a nutty and fantastic flavor. These are packed full of protein and great for a snack any time of day.

Ingredients:

1/2 cup roasted almonds

1/2 cup roasted cashews

1/2 cup roasted pecans

1 tablespoon flax seeds

1 tablespoon chia seeds

1 tablespoon powdered peanut butter

1 tablespoon chocolate protein powder

1/4 cup creamy reduced fat peanut butter

1/4 cup pure maple syrup

10 pitted dates

dash of sea salt

Directions:

  1. Soak dates in hot water for 10 minutes.
  2. Pulse nuts in food processor until they are broken up, but not a powder.
  3. Add chia seeds, flax seeds, powdered peanut butter, protein powder, salt. Pulse to mix.
  4. Add peanut butter, maple syrup, and drained dates. Pulse to mix.
  5. Add maple syrup if the mixture isn’t sticking together yet. If mixture is too sticky to form balls place in the refrigerator for 10 minutes.
  6. Use an ice cream scooper or tablespoon to make balls.
  7. Store in an air tight container in the fridge until they disappear.
