Marshmallow Stuffed Funfetti Cupcakes with Vanilla Sprinkle Buttercream Frosting

For my son’s birthday I wanted to make a colorful cupcake with a yummy filling.  He loves sandwiches with marshmallow fluff, so I decided to try something new and stuff cupcakes with some marshmallow fluff before baking.  My kids said these were some of the tastiest cupcakes ever!

Ingredients:

Cupcakes-

1 box funfetti cake mix

1 cup water

½ cup unsweetened applesauce

3 large eggs

1 tablespoon marshmallow fluff per cupcake

Frosting-

½ pound unsalted butter at room temperature

4 cups powdered sugar

4 tablespoons milk (more if needed to thin frosting)

2 tablespoons colored sprinkles

1 teaspoon vanilla extract

Directions:

  1. Line muffin tins with cupcake liners and pre-heat oven to 350 degrees. 
  2. Mix cake mix, water, applesauce, and eggs until combined.
  3. Use a medium cookie scooper to halfway fill muffin tins reserving some to add on top of marshmallow fluff.
  4. Add a teaspoon/tablespoon of marshmallow fluff to each cupcake.
  5. Top the marshmallow fluff with another teaspoon/tablespoon of batter.
  6. Bake 20-25 minutes until cupcakes are set.
  7. Allow cupcakes to cool in the pan for at least 10 minutes before removing.
  8. For frosting use a whisk attachment to mix butter, powdered sugar, milk, and vanilla.  Add more milk if needed to get the desired consistency.
  9. Add sprinkles and mix to combine.
  10. I used a frosting tool with a large tip to frost my cupcakes.
  11. Enjoy!

If you like strawberries, then these cupcakes will make you melt.  The strawberry filling and tasty strawberry buttercream are a delight.  I used strawberry ice cream topping as my filling, but you can use pie filling, jam, or preserves as well.  Freeze dried strawberry powder

This is a tasty and simple recipe good for any night of the week.  I simply mixed jerk seasoning with brown sugar and rubbed it all over the tenderloin.  Then once the oven was ready I baked until the meat reached 160 degrees. I served

Mango and Red Cabbage Lime Coleslaw

I love fruity and light coleslaws in the spring and summer.  Feel free to add/subtract ingredients depending on your personal preferences.

Ingredients:

½ head red cabbage sliced

½ cup matchstick carrots

4 tablespoons lime juice

2-4 tablespoons honey or agave nectar

2 tablespoons mango balsamic vinegar (a white balsamic vinegar works too)

1 tablespoon siracha

2 mangos diced

2 scallions diced

4 sprigs of mint diced

Directions:

  1. Mix cabbage, carrots, scallions, mango, and mint in a large bowl.
  2. Mix lime juice, honey, siracha, and vinegar in a small bowl.
  3. Pour the liquid mixture over the coleslaw and mix to combine.
  4. Note: I prepped this the day before and mixed it before serving to allow the cabbage to soak up the flavors from the dressing.
  5. Enjoy!

On weeknights I am always looking for quick and simple meals.  This is a one pot dish that doesn’t take long to prepare. I served this with nachos and zachos (zucchini sliced nachos). Ingredients: 4-5 boneless pork chops 2 tablespoons salt 1 tablespoon chili powder

Oreo Pancakes

If you like pancakes and you enjoy Oreos then this is a recipe you have to try.  These pancakes feature Dutch processed cocoa and crushed Oreos.  I topped mine with Nutella hazelnut spread, vanilla Greek yogurt, and crushed Oreos.  My children topped their pancakes with whip cream and crushed Oreos.  You can even make these into large pancakes and stack them with layers of whip cream in-between to make a pancake layer cake.  No matter how you top these you will savor every bite!

Ingredients:

1 cup all-purpose flour

½ cup Dutch processed cocoa

1 scoop (1/4 cup) vanilla protein powder

¼ cup cornstarch

6 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon salt

¼ teaspoon baking soda

1 ¼ cup nonfat milk

¼ cup unsweetened applesauce

2 large eggs

1 teaspoon pure vanilla extract

1 cup crushed Oreos (plus more for topping)

Toppings: Nutella, whip cream, vanilla Greek yogurt, chocolate syrup, crushed Oreos, etc…

Directions:

  1. Add dry ingredients to a large bowl and whisk to combine.
  2. Mix eggs, milk, applesauce, and vanilla extract in a medium bowl.
  3. Fold the wet ingredients in to the dry ingredients being sure to scrape the bottom and edges of the bowl.
  4. Gently fold in the crushed Oreos.
  5. Let the batter rest for five minutes while you heat a nonstick griddle to medium low heat.
  6. Pour ¼ cup scoops of the batter on the griddle.  Once bubbles appear flip over and cook for another minute or so.
  7. I place pancakes in a Tupperware and cover with a towel to stay warm.  You can also place pancakes on a baking sheet in the oven at 200 degrees while you finish making all of the pancakes.
  8. Top pancakes with toppings of your choice.
  9. Enjoy!
