If you like pancakes and you enjoy Oreos then this is a recipe you have to try. These pancakes feature Dutch processed cocoa and crushed Oreos. I topped mine with Nutella hazelnut spread, vanilla Greek yogurt, and crushed Oreos. My children topped their pancakes with whip cream and crushed Oreos. You can even make these into large pancakes and stack them with layers of whip cream in-between to make a pancake layer cake. No matter how you top these you will savor every bite!
Ingredients:
1 cup all-purpose flour
½ cup Dutch processed cocoa
1 scoop (1/4 cup) vanilla protein powder
¼ cup cornstarch
6 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
1 ¼ cup nonfat milk
¼ cup unsweetened applesauce
2 large eggs
1 teaspoon pure vanilla extract
1 cup crushed Oreos (plus more for topping)
Toppings: Nutella, whip cream, vanilla Greek yogurt, chocolate syrup, crushed Oreos, etc…
Directions:
- Add dry ingredients to a large bowl and whisk to combine.
- Mix eggs, milk, applesauce, and vanilla extract in a medium bowl.
- Fold the wet ingredients in to the dry ingredients being sure to scrape the bottom and edges of the bowl.
- Gently fold in the crushed Oreos.
- Let the batter rest for five minutes while you heat a nonstick griddle to medium low heat.
- Pour ¼ cup scoops of the batter on the griddle. Once bubbles appear flip over and cook for another minute or so.
- I place pancakes in a Tupperware and cover with a towel to stay warm. You can also place pancakes on a baking sheet in the oven at 200 degrees while you finish making all of the pancakes.
- Top pancakes with toppings of your choice.
- Enjoy!
