Chipotle Cocoa Rubbed Salmon

If you like a mixture of sweet and spicy this is the perfect salmon for you. The topping adds a little crunch and a huge burst of flavor.
Recipe adapted from Food Network
Ingredients:
2 pounds salmon
1 teaspoon chipotle chile powder
2 teaspoons unsweetened cocoa powder
2 teaspoons dark brown sugar
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon sweet paprika
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2-3 tablespoons extra virgin olive oil
Directions:
- Preheat oven to 350 degrees. Line a 9×13 pan with aluminum foil and spray with olive oil spray
- Lay salmon skin side down in the pan.
- Paint the salmon with the olive oil.
- Mix all spices, cocoa powder, and sugar in a bowl. Sprinkle evenly over the salmon.
- Bake for 45 minutes until salmon is firm to the touch and flaky.
