Chipotle Cocoa Rubbed Salmon

If you like a mixture of sweet and spicy this is the perfect salmon for you.  The topping adds a little crunch and a huge burst of flavor.

Recipe adapted from Food Network

Ingredients:

2 pounds salmon

1 teaspoon chipotle chile powder

2 teaspoons unsweetened cocoa powder

2 teaspoons dark brown sugar

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon sweet paprika

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper

2-3 tablespoons extra virgin olive oil

Directions:

  1. Preheat oven to 350 degrees.  Line a 9×13 pan with aluminum foil and spray with olive oil spray
  2. Lay salmon skin side down in the pan. 
  3. Paint the salmon with the olive oil.
  4. Mix all spices, cocoa powder, and sugar in a bowl.  Sprinkle evenly over the salmon.
  5. Bake for 45 minutes until salmon is firm to the touch and flaky. 

I served this with Parmesan crusted potatoes and chili lime cauliflower with a smokey sauce. (See recipes in Sides)
