Chocolate Balsamic Vinaigrette
This vinaigrette goes well with an arugula based salad. For my salad I added pomegranate seeds, blueberry goat cheese, carrots, roasted pecans, and dried cherries. Once you make this keep it at room temperature. I only made enough for 2-3 servings so you may need to double the ingredients if you want more of the dressing.
Ingredients:
1/4 cup dark chocolate chips
1/4 cup balsamic vinegar
1/4 cup olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
Directions:
- Microwave the chocolate chips at 50% power for 1 minute and then 30 second intervals until melted. Stir until smooth.
- Whisk in the vinegar and olive oil. Add the salt and pepper.
- Serve the dressing on the side or drizzle over salads.
